Yum- everyone's meals sound so delicious! And tonight, I'm happy we have some leftover enchiladas from 2 days ago. I cooked up a storm last night and today with my brother here, but it was so much fun! I love that he appreciates food as much as I do :-)

The Rock Crok is an awesome pot from Pampered Chef that my daughter told me about. A bit pricey, but SO WORTH IT!!! She is not a cook at all and is now serving wonderful, healthy meals in minutes. Sure am glad she told me about it.

The Rock Crok does sound interesting, but I couldn't find it when I searched. Cdavismk1, is it a type of slow cooker? I can't make a successful breakfast casserole if my life depended on it and it is one of my faves. It makes sense, though, that it might work in a slow cooker, and everything I need to make it is on sale this week at HT with SD.

Tonight might be a roasted chicken for dinner since they are on sale at both FL and HT, smashed potatoes, and green beans stolen from the pup lol ;)

cdavismk1 - I love breakfast casserole, but sadly, my little people prefer the ingredients to be served separately so I don't make them as often as I would like. Enjoy yours! That Rock Croc sounds like a super kitchen gadget. I'll have to read up on it.

FINALLY got the chicken and asparagus last night. So good! I think I might take Faye's suggestion of breakfast for dinner and throw a breakfast casserole in my Rock Crok. 15 minutes to a complete meal! Raesmom, I'm salivating a bit thinking of BBQ chicken thighs......

Tonight we are having breakfast for dinner with scrambled eggs, turkey bacon, cheddar biscuits and fruit. Everyone loves it when there is turkey bacon on the menu!

Raesmom - your menu is making me hungry as well!
