Nakabi - your 3 year old has very good taste in mushrooms! And I think Raesmom forgot to mail my invitation in time as well. lol

I have wondered about the Pasta Zero noodles as well. Thanks for the review. :-)

Nakabi- let me know if you try it!

Also forgot to mention, after you grate the zucchini, make sure and squeeze it out with some paper towels to remove all the excess water!

Lol nakabi I mailed the invitation.....i guess it didn't get there in time ;)

Raesmom- just saw your msg about homemade chipotle??? my only question is why I wasn't invited? ??????? you know I love all things chipotle! !

Jdoudglas- yes, my DH is a sweetheart for sure. We brought that HUGE rosemary bush here to TN and it does very well.
RFB-I love squash and thankfully the whole family eats it. I'll have to try it that way; thanks for the idea. I can't wait for spring so we can start gardening!

Twinredheads- that's what I've heard. But I might give them a try if they do in fact grow on you :-)

Jdouglas- oh no! I'd be lost without squash :-( And both your dishes sound equally yummy!!!

At the risk of starting another epidemic, tonight might be baked ziti with Italian sausage. Otherwise, it might be a shrimp scampi-ish concoction with pasta and some kale I discovered in the freezer.

RFB, your zucchini sounds so good! I wish DW would eat it, but she won't touch anything from the squash family. So sad. I get too lazy to make it just for myself very often.

Nakabi, your menu sounds awesome as always! I just dug up my dead rosemary plant yesterday and it made me think of the wonderful rosemary plant your DH brought home for you that time.

RALEIGHFOODBLOGGER - I would have to say the Pasta Zero noodles are an acquired taste. I did not like them at all the first time I tried them but toughed it out and now I enjoy them. With a little marinara and some parmesan is my favorite.

RAESMOM1612 - Tell Rae that Alexa says hi right back!

BARBIEDOLL1967- The meatballs are oh so simple! I take 1.5 bags of cooked perfect meatballs (frozen), 1 jar of Ragu and heat on low for 3 hours. Can't get much simpler than that!

    Chicken tacos are always good!
Tonight I'm making grilled lemon pepper chicken using up my last lemon and chicken breast from Aldi's last sale. We will have kale and spinach salad topped with cranberries, pinenuts, goat cheese, and roasted brussels sprouts and drizzled with balsamic vinaigrette and parmesan cheese. Also having grilled mushrooms sauteed. with EVOO, S&P, and rosemary per my 3 yr olds request.

The chicken tacos sounds good. I've never had them before. Twinredheads: your meatballs sound delicious. How do you fix them? Thanks for the article RaesMom1612. I'm not sure what I'm having tonight. I may just pop a dinner in the microwave.
