    Hubby's choice of BLT or Grilled Cheese sandwiches with hearty tomato soup for me and chicken home style noodle for him. This is more of a lunch menu for dinner tonight.

    nakabi - I don't add lime juice but it sounds good. For my guacamole, I use mushed up avocado, a little bit of light mayo and a lot of garlic. That's it. Sometimes I add in a little diced tomato to dress it up, but the kids prefer it without so none tonight.

    Nakabi- thank you! You can easily sub out ingredients that you like as well :-) So grateful for those pots and pans I won from it... I use them every day!

    And oh yes, I'm also using the mozzarella shredded cheese from last week's HT sale for the lasagna petals. You meal sounds so yummy, Faye! I think my biggest weaknesses are enchiladas and lasagna!

    RFB & Faye-both your meals sound SO good! RFB I really do need to make your lasagna petals; they sound amazing! And Faye, guacamole is mm mm good! Do you add lime juice to it?

    Tonight we are having spinach and cheese enchiladas (cheese from recent Harris Teeter B3G3F sale. Tortillas from HT when they were $1 per package recently). Sides of corn and sauteed zucchini and onions. I have a few ripe avocados that need to be used so we'll have homemade guacamole on top!

    Nakabi - your taco soup sounds like it was a hit! Love when that happens!

    Tonight I'm making my Not Too Spicy Lasagna Petals... I had leftover wonton wrappers from a few weeks ago (the recipe just uses 1/2 a pack) plus leftover rotisserie chicken from last night. The rest we have on hand. And roasted asparagus on the side (from last week's HT sale).

    Once again I underestimated just how much my husband and children love my cooking :) The taco soup that was meant to be 2 meals ended up being one. And I cooked a lot. Mr. Nichols ate 3 large bowls, and each of the kids (obviously not ESPN lol) ate 2 bowls. I ate one.
    So this morning I'm making beef stew using London broil bought on markdown, potatoes from the Aldi sale, carrots from last weeks Aldi sale, beef stock I made from the last pot roast I made a few months ago. We will have jalepeno corn bread (I lightly saute chopped jalepeno and add it to the cornbread before baking) with it. Snickerdoodle cookies vanished overnight (wonder who ate them all??????) and so F and J will help me make fruit parfaits using Greek yoghurt, granola we made last weekend, frozen blueberries, and light creme.
