    Jdouglas- it's so simple, I just defrost and clean them, then pat dry. I place them in a bowl, add some olive oil, lime juice, fresh cilantro, salt and pepper, and red pepper flakes if desired. Then let sit for 15-30 minutes to marinate. And to roast, just pour onto some foil sprayed with non-stick spray in a single layer (I place the foil on a cookie sheet and shape up the sides to make a "foil baking pan"). Then roast at 375 for about 6 or 7 minutes until just cooked through. You could also take the marinated shrimp and skewer them and grill on a grill pan :-)

    Tonight we are having roasted whole chicken ($1.79/lb) stuffed with rosemary, garlic, lemon slices, and capers.
    We will have mashed cauliflower (in place of mashed potatoes), gravy, green beans from the garden, and spiced roasted carrots. Key lime pie I made yesterday for dessert.

    Tonight we are having bbq beef sliders using London Broil on sale last week, rolls, cole slaw, apple slices.
