    Raesmom, safe travels back to NY.

    One other thought about Rae's allergies -- has she been hanging out with the new pups? They could prompt an allergic reaction too, especially since they are outside dogs.

    WFR, if I had a recipe for it that was reasonably accurate, I would be glad to post it. Sadly, it never comes out the same way twice since I just kind of wing it. My Mom is the only one who could make it with good results, and she doesn't like to share recipes.

    That said, here is the general idea. In a rectangular casserole dish, put a layer of dried out crustless bread. Sprinkle with some dried onion flakes. Top that with a layer of muenster cheese, about 8 ounces of shredded cheddar, and another layer of muenster. Top that with another layer of bread. Mix together enough eggs and milk (today I'm trying half & half) with a couple of teaspoons of dry mustard powder (do not omit) to saturate the casserole. Top with more onion flakes. Keep in fridge, covered, overnight. Next day, bring to room temp and bake until puffy and done. Top with cooked bacon, and sliced tomatoes, either raw, or roasted slices. Sorry I don't have a time or temp for you...

    All this talk of breakfast casserole has me switching up the menu and making the strata tonight that I had planned for tomorrow. Plus, I had Thai shrimp and noodles today with a friend so we'll have pasta and shrimp tomorrow instead.

    nakabi - how I love fried mushrooms!! I scored a great deal on a big bag (about 16 oz of mushrooms) at HT yesterday. They were marked down to $1.50 even though they looked just fine. I am putting them ALL in the strata tonight! Yum!

    wildfrenchrose - my family loves those Aidell meatballs, as well!

    It sure is jdouglas, I was just telling my DH yesterday that now that we know what is wrong with her, it all makes sense. My poor Rae used to get sick every year from Sept-Feb since she was born!!

    Funny you are making breakfast casserole today, That was initially what I was going to make too (great minds think alike lol), but since taco soup was not touched last night I am saving it for dinner tomorrow (it is the last dinner that little BIL will have, they start school in NY on tuesday so we are driving him back on Friday.....I will miss him!!) Enjoy!!

    Raesmom, I'm so glad to hear Rae is doing better. The fall is a tough time of year for allergies.

    Nakabi, Mr. Nichols' menu sounds awesome, and the cherry on the sundae is that he's cooking it too! ;)

    Dinner here tonight is sort of a breakfast casserole/mock cheese soufflé from my childhood called Liberace's Lunch. How it got that name, I have no clue. Traditionally, it is served with roasted tomato slices and bacon on top, but so that DW can eat it, I'm going to puree the roasted tomatoes into a dip and pulverize the cooked bacon in the food processor and sprinkle it on top.

    I *was* going to make a vegetable Lo Mein - so many garden veggies being shared at work! A little pasta, some stir-fried veg, and a simple sauce made from tamari, hoisin, fresh garlic and ginger... and a little touch of sriracha. Toasted sesame seeds and sliced scallions on top put your eyes and stomach on the same page!

    Alas, I got a dinner invite so I think I'll be having a panini with artichoke hearts, roasted red peppers, sun-dried tomatoes and feta... with no dishes for me to wash!

    Mr. Nichols is cooking tonight and on the menu is grilled lamb chops w/lots of fresh rosemary from the garden, grilled zucchini/onions/tomatoes/red capsicum/pineapple/onions marinated in some Lawrys hawaiian marinade, fried mushrooms, fried green tomatoes/okra, and baked sweet potatos.

    Fake meatloaf using Aidell's carmelized onion chicken meatballs covered in tomato sauce. There were on sale at Lowe's last week and with the sale and coupon from the demonstrator in the store, I got them for around $5 if I remember correctly. Each pack will feed me at least 2x, if not 3, so fairly economical. Having with canned potatoes drained, smashed and mixed with butter.

    Ascherer~ So glad you tried them.....a bit of cheese usually oozes out of mine, but there is still a good amount in the meatballs. I just keep rolling until the meatball is pretty uniformed. My meatballs are pretty big (a little smaller than a golf ball maybe) because if I see a litlle "crack" I'll put more meat on it to seal it up.

    Last night we were invited over by a friend for dinner, so taco soup is made and will be dinner tonight :)

    Thanks for the allergy update, since giving Rae her inhaler and her allergy meds, she is doing better!!
