    Faye and Jdouglas- thank you so much! Sorry on the late reply, just sat down after a full day of cooking! But the interesting thing is that there are barely any dishes... and the house stayed cool, with no oven... love it!! :-)

    Tonight was a quick frozen pizza on sale at Kroger after different appointments for each of us. Now DH has to go back to work for a few hours.

    jdouglas13 - I agree that the raw food lasagna looks cooked! I bet it was a delicious "lasagna salad".

    RFB, I just looked at your pic of the lasagna. It was amazing!! And the herbed EVOO drizzle was gorgeous. Hard to believe it's all raw food!

    Raesmom, your cold weather sounds wonderful! Enjoy your visit and the baked ziti. Hope your Dad is doing ok.

    With all the baked ziti talk, it reminded me of a spin on baked ziti that I haven't made in a while, so we're having that. Basically undercooked pasta mixed with ricotta, mozzarella, parm, a little garlic, spinach - the chopped frozen kind is great for this (defrosted), a sautéed shallot or two, and some sautéed chopped prosciutto (optional). Mix all this together, thin with a bit of milk if you need to, top with parm, and bake until hot and the top is browned and a bit crispy. Sometimes I just bake it briefly (20 minutes) and then turn on the broiler for a few minutes. Really good and pretty easy.

    RFB-Rae (of course) brought her Frozen movie along and we've watched it as a family already twice :-) can't thank u enough for that!!
