    Nakabi, I like the braised pork rib recipe by Melissa d'Arabian from the Food Network and it is on the internet. For beef ribs, I substitute red wine for the vinegar and my family likes carrots so I include about a pound and a half of carrots. Towards the end of cooking I add mushrooms to the beef. It is almost a beef bourgenone. I prefer braising by using my Le Crueset Dutch oven but due to the hot days I try to limit my oven use so I whip out the crock pot. It takes longer to cook put saves me from the heat! Enjoy.

    BJMHolmes-that sounds delicious! How do you make the pork ribs? We don't eat pork, but I'd love to try braising beef ribs. And your sauteed fresh spinach and muhrooms?? YUM!

    The crockpot is working overtime today, it is filled with braising boneless pork ribs, carrots, and onions. Side dishes include rice and sautéed fresh spinach with mushrooms. Sliced peaches for dessert.

    I agree, what awesome meals!

    And tonight we're doing twice baked broccoli, leek and peas potatoes and slow cooker baked beans. Organic potatoes on sale at HT today, and the rest we had... sounded comforting with this dreary weather :-) P.S. if you are a leek fan, I was SO excited to find them cut up and frozen at Trader Joes. They're usually pretty expensive, and love that I can add these in my favorite recipes... for much less!

    Super meals from everyone tonight! Love the avocado in the BLT's Twinredheads!

    I am working late tonight and one of my teens is having a sleepover with a couple other girls. They requested pizzas so it's frozen pizza, watermelon and whatever else they get into. :-)
    Good luck to my husband while I am gone. LOL

    RAESMOM1612- That would be PERFECT as the other veggie that I'm overrun with is cucumbers! I've canned so many pickles in the past two weeks that I'm not sure we need any more :). I have a recipe for cucumbers and onions in vinegar but had never thought to add tomatoes to the batch. Thanks for the idea!

    twinredheads~before my FIL passed away he was the best at having backyard bbq's all the time in the summer. He used to do this one "salad" that was tomatoes and cucumbers marinated in vinegar and salt and pepper........OMGoodness!!! So simply, yet so yummy!! No one else would eat it but he and I, we would actually fight for the last tomato!!! Boy I miss those "salads" I try making them myself, but as the theme has been on this thread all day "no one cane make it like mom", or in this case "daddy"

    Maybe you can try making some of that?? I think Im going to "try" again and make it tonight to have along side the chili for a refreshing (and healthy) summer treat :)

    That all sounds really good. Esp the BLTA :)

    Tonight is Spaghetti with garlic bread for us. Possibly a few ears of corn can join in the fun.

    Have a gazillion tomatoes from our garden that need to be consumed so I'm thinking BLTA's, corn on the cob and fruit of some kind. BTW, the A in the BLTA's stands for avocados :)
