I love breakfast casserole -- never had it till we moved down here. I was working in a real estate office and one of the brokers brought it in for us one morning. I asked him what it was and he looked at me like I had just fallen off the boat from somewhere. LOL

Raesmom, if I'm remember my high school Spanish correctly, your coctel de carmaron is one of my faves -- shrimp cocktail, right?

Dinner tonight is going to be the biggest thing taking up space in the freezer because I seriously need to make some room for the parm for us and FL's frozen green beans for the pups. Here's hoping I have a turkey in there. You never know -- I just might!

The breakfast casserole was delicious with plenty leftover for breakfast or lunch today. It's really good with Wholly Salsa on it to give it a Southwestern flair.

Tonight we are having BBQ chicken sandwiches on Sister Shubert rolls, fruit salad and brown rice. I am teaching a late class so I will put the chicken in the slow cooker around lunchtime and they can eat when they are ready!
