    Faye - thanks for your concern. I get stronger every day. The home cooked food helps. I have been doing the daily grocery shopping for all of this week. Everyday is getting better. Some times we need that smack up side the head to remind us to take care of ourselves just like we take care of everyone else.

    Meatloaf (Manager's Special mark down at Kroger) with baby lima beans (on sale at Kroger) and left over baked beans. A couple of pairs with some brie for dessert.

    I can tell I have been home for a while. I am getting back into this cooking thing and the dish washer gets run daily. So does the washer and drier. :-)

    Fresh Turkey breast got on sale at Kroger yesterday , cream style corn fixed and froze last summer, green beans canned from last summer , sweet potato casserole I froze in meal size portions after thanksgiving . homemade stuffing

    BBQ chicken in the Crockpot pulled and served on hamburger buns. Asparagus and Alexia tater tots on the side.

    Mon Account- I'm with you on stir fries... especially with jasmine rice!

    I'm doing grilled chicken skewers on the grill pan (and no, it's not just because it's storming out... but I'm not great at the grill!) marinated in lemon juice, Dijon, garlic, olive oil, red pepper and cilantro (chicken, bags of lemon, and cilantro on sale today at HT). And then we're having giant steamed artichokes on the side (also from HT on sale). They are kind of expensive, but a major treat... we dip them in my homemade mayo :-)

    Mon Account - the Gardein Szechuan Beefless Strips sounds great. I will definitely have to try that variety. I agree about stir frys. I throw in whatever veggies I have on hand with some teriyaki marinade and it's always delicious. Thanks for sharing. :-)

    I'm using Gardein Szechuan Beefless Strips (on Harris Teeter VIC right now) to make a stir fry.

    I usually use sugar snap peas, carrot, onion, red pepper, all roughly chopped to make about 4-5 cups of veg (the sweet really balances the spicy of the Szechuan).

    Pop the Gardein in the oven, start some jasmine rice, and make the veg stir fry.

    Toss the veg and Gardein together when they are done - Gardein comes with a sauce pack to which I add about 1/4 of low-sodium soy sauce and 1-2 T hoisin sauce to make up for the added veg. Serve on a bed of rice - it's really tasty.

    It's basically winging it - stir fries are so forgiving and really help clean up the fridge!

    Changed up the menu as planned per the request of my oldest daughter.

    Tonight we are having shrimp soft tacos with choice of a variety of toppings (lettuce, green peppers, onions, tomatoes, cheese, light sour cream, salsa, avocado slices). Sides of rice, leftover cole slaw from last night and watermelon.
