    Tonight was grilled chicken over ceasar salad. Apple pie and ice cream for dessert.

    RFB, Ascherer, and Faye, thanks so much for your good thoughts. I really appreciate them.

    Ascherer, I had to laugh about your husband still cooking for so many. I learned to cook for 5, and have never really learned to downsize successfully. The first time I ever made dinner for my DW after we moved in together, she asked me if we were having company because I had cooked so much. It had never dawned on me that 2 people really didn't need 10 servings of chicken parm.

    jdouglas - I, too, am sorry to hear that your dad is doing so poorly. You are all in my thoughts.

    We are having salmon burgers, saffron rice and sauteed zucchini and mushrooms for dinner tonight...which I need to go make right now. :-)

    jdouglas - my heart goes out to you. Know that I am thinking and praying for you and your family.

    Tonight is leftover spaghetti. Sometimes my DH forgets he is not cooking for his 4 siblings and we end up with a lot. Any leftover tonight goes in the freezer. Last nights veggie was lima beans. DH just learned he loves them. Go figure.

    Clean out the fridge night at our house....i think there is some ham in there from Easter, chicken salad, rice and beans, left over Birds Eye Voila and whatever else we find lol

    Tonight is a 2 for 1 grilled dinner. Strip steak, asparagus with garlic-EVOO-lemon pepper, marinated London broil, radicchio, and red onion slices all cooked on the grill.

    Tonight we will have the strip steak, some of the asparagus, and mashed potatoes. Tomorrow or the next night we will have steak salad with the London broil, remaining asparagus, grilled onion, fresh tomatoes, and grilled radicchio over romaine. If there are any mashed potatoes left, they'll be turned into panfried potato cakes.

    Hopefully this will persuade DW to forgive me for M&C and broccoli, yet again, last night. I got some pretty bad news about my Dad's health, and needed some comfort food.

    We have another tofu package left from the last super doubles and came across this recipe from a blogging friend. She has some incredible Indian-inspired recipes. I'm going to have to pop out and find some garam masala (do they sell this in HT?)... but the rest, I have on hand.
