Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

    Mon account- sounds like a perfect blending of flavors!

    A mid week part-leftover, part-fresh meal that fits a chilly spring day.

    Arugula salad (those containers seem bottomless!) with mandarin oranges, shaved parmesan, and a quick vinaigrette of 1 T lemon juice, 3 T olive oil and salt/pepper.

    Then a warm (well, reheated!) red potato salad. I always wing the amounts but it's about a generous 1/3 C Dukes, 1 T capers, and 1 T chopped dill (I used 1 t dried), and a bit of dijon all mixed together then gently tossed with 3 medium red potatoes (large-diced and boiled) and then finished with freshly cracked black pepper.

    For protein I may bake some tempeh with sherry, tamari and poultry seasoning - I think it would go pretty well with the salads.

    A few warm spring foods, and a few chilly spring foods. Peppery, savory, and bright.

    "special bbq sauce" wings tonight for hubby and Rae, ill be having a salad and a baked potato from the 10lb bag of potatoes at ALDI that i picked up today. Throw some sour cream on it and dinner is served :)

    RFB- the chicken sophie does sound good! Our meals are very similar tonight. Chicken breast stuffed with spinach, goat cheese, and sundried tomatoes and wrapped in prosciutto and baked. Steamed broccoli , wild rice pilaf, and grilled artichokes on the side.

    We're having a pot roast I made yesterday with carrots and mushrooms, green beans, and something potatoes-- I think smashed since we have red ones to use up.

    Tonight it's beef stew, mashed potatoes and roasted asparagus. I need warm food on a cold day.
