    ascherer - sometimes I wonder the same thing. lol. One day at a time I guess, just like everyone else. :-)

    FYI - Diana's Spinach and cream cheese baked omelet she posted on Monday was INCREDIBLE!!!! everyone loved it and I will be posting a photo tomorrow. I made the spinach version for hubby and me and a mushroom version for my girls (who do not care for onions or cooked spinach). My oldest daughter informed me that I should make it every week! Score for the mom! I'll post all the details in tomorrow's What's for dinner thread. Need to go cut some coupons for my shopping tomorrow. Watch out Teeter - here I come. lol

    I finally made the pork cutlets topped with ham, swiss, and spinach (on DHs and most of the leftovers). We added a side for frozen mixed veggies.

    Faye, Thanks. I don't see how you parents do it. I can't keep up with my DH after work hour schedule.

    Fiona (my 2 year old), requested some Ugandan food so I'm making nkoko (chicken stew), posho (ground maize), and peanut sauce. Yum!!!! And since I've been a little bit homesick, this will help :)

    Salmon, baked sweet potatoes. If I have time to stop by the store on the way home I will make some apple slaw as a side.

    It's tacos, refried beans, black beans, and nacho's for us tonight as it is my hubby's birthday and what he wanted. Not as frugal as I would have liked with the cost of ground beef - especially when it somehow gets brought in the house and put on the bench in the mudroom rather than the fridge and not found until the following morning - almost 24 hours later. I am so surprised the dogs didn't eat it since it was right next to the dog dish. It went in the trash and I just bought more. We don't eat much ground beef so I don't usually keep any/much on hand and right now I didn't have any. Thank goodness it was only a 1.5 lb package.

    Pinto bean and cheese quesadillas. Served with chips and guacamole left over from our Super Bowl snacks. Side of multi-colored mini peppers from Aldis to round out the meal.

    We're doing Brown Sugar Mahi Mahi. So easy, and I realized I had some frozen from Trader Joes. I think we'll do the apple kiwi slaw on the side since I have 2 more kiwis left (and always have apples) and the rest of my butternut squash, roasted.
