    Thanks, guys. I love cornbread in any form, buttered, in chili, in pinto beans, in butter beans (butter beans where I'm from are the large white beans)--but my fav is cornbread & milk. Since milk bothers me off & on--can anyone advise as to a lactose free milk that tastes like regular whole milk? Cornbread and milk is in my near future, I hope!

    Beadhive - your shrimp sound great! I have some shrimp in the freezer I need to use soon - it may become sweet and sour this weekend. Thanks for the idea.

    Jdouglas - bummer on the chicken but at least it was edible and won't go to waste.

    Tonight we are having chicken stroganoff on egg noodles with sugar snap peas on the side. I am using the HT chicken tenders that were on sale Buy2 Get 3 Free in the 2.5 lb bags recently.

    Sweet and sour shrimp over rice using a Kraft recipe maker along with broccoli. Tapioca for dessert.

    Well, I was disappointed in the Smart Chicken. It was okay, but nothing special, certainly NOT Bell & Evans. The leftovers will be turned into soup today. It smelled a little funny when I opened the package (not bad, just gamey) but I attributed that to being air chilled versus water-processed. I would not buy one again, and am very glad I didn't pay anything OOP. DW and I really enjoyed the Bell & Evans we had a while back from Whole Foods, and agreed that we would splurge on one once a month or two.

    Nakabi, enjoy the gnocchi! I should make some myself. It would be good with the leftover chicken. If you can, bring the potatoes to room temp before you make them into dough so they're easier to handle.

    WFR your cornbread muffins sound wonderful. One of my vices MANY years ago when I had my first FT job was to buy a grilled corn muffin with lots of butter at the Kosher deli down the street. I think I packed on 15 lbs that first year from those muffins. Yum!

    Chili made with marked down stew beef cut into little chucks, lots of onions, used the fire roasted tomato Campbell's recipe starters from long ago sale in place of tomato sauce, aldi brand chili beans. Homemade cornbread muffins. YUM

    jdouglas- if you see this, curious to see how the Smart Chicken was? I saw it today at HT, and I've tried something similar, but not this exact brand. Mine had an odd flavor, so I'm interested to see how these worked for you :-)

    Thanks to Jdgoulas for the suggestion of using my leftover baked potatoes to make gnocchi for my chicken and dumplings (chicken and gnocchi). Using the chicken from a few weeks ago at Aldi when it was $.29/lb! Will have some wholewheat rolls with it if Mr. Nichols remembers to buy yeast like I asked him to. If not, baguette.
