    jdouglas- I'm a total spice wimp too, which is why I only used 1/2 a tiny can of chiles. Perhaps use some fresh spinach instead, just to add a bit of color? You could also chop up some extra green onions and fold in the mixture to add a bit of crunch. You could also use some green peppers (I'm not a fan, but could be interesting :-)

    The enchilada casserole does sound good. I am a super spice wimp, though, and don't eat chiles. Period. Should I sub something else?

    Gator Girll I LOVE those German Johnson tomatoes. Soooooo good!

    It is almost 7 pm, and I haven't got a clue what we're having. I suspect it may be mac & cheese with a side of broccoli. It's my brain-dead menu. In all fairness, it is homemade M&C, so it's delish.

    Made the manicotti that I posted on yesterday's dinner thread, and it was really yummy! I used all ground beef (left out the spicy sausage) and added about 1/2 bag of leftover spinach to the beef mixture to wilt. Topped all with a bunch of cut up green onion after it's cooked. Really simple, and yummy... just thought I'd pass it on. (Recipe Makers are still on sale at Target for .79 with $1 off man. coupon and $1 off target coupon on website. Think I'll buy a few more!)

    raesmom1612 - that sounds yummy! I have made a similar recipe before and sprinkled the Kraft Fresh take Italian parm seasoning and cheese on the top before cooking. Adds a nice crust.

    I made a chicken pasta salad and we're having corn on the cob and a tomato salad (German Johnson's from the farmer's market) to go with it.

    Faye asked me to tell her what I thought about the Campbell's Tavern style pot roast sauce I tried last night -- I wasn't a big fan. There was some herb or spice in it that put me off. It has a lot of vinegar in it which makes it pretty tangy. I tried to mask some of the flavor with ketchup but I probably won't buy it again. DH said he liked it but he said he liked the way I made pot roast to begin with best.

    baked creamy chicken in the oven using a can of cream of chicken soup, cream cheese, and milk. Homemade smashed red potatoes, birdseye mixed veggies.

    Chicken tacos. Chicken already cooked. Got shells and sauce today at HT. Already had cheese from LF super doubles. Will go to my favorite produce stand and pick up a tomato.
