    Tonight's dinner:
    Boneless pork chops in the crockpot with a gravy type sauce consisting of cream of chicken soup, dry Italian dressing and cream cheese. Once all is ready it will be served over pasta or rice, along with a side salad and garlic knots.

    Aerogirl, thanks for your suggestion of egg salad. Great idea and DW really likes egg salad!

    Barbiedoll, what about refrigerator pickles? I can take a look on Pinterest and see if anything looks good.

    Ascherer, hugs to you and your Momma. Hope she is doing better.

    And thanks to you both and to Faye for your help with my "soft food project" for my DW. What awesome suggestions!

    It was late last night to start the hamburger stew and mashed potatoes, so I made her scrambled eggs with chives and dollops of ricotta, and a bowl of triple chocolate ice cream for dessert. :)

    Today we are off, so the plan is to make a big batch of mashed potatoes to incorporate or reincarnate into different things, and to get the hamburger stew into the slow cooker. Here's hoping LillyKitty isn't feeling too curious today... ;)

    Tonight's supper will probably be leftover chicken breast with instant mashed potatoes and cucumbers. I have at least 150 cucumbers at home right now.

    Does anyone have an easy sweet pickle recipe that I could make with my cucumbers? I want to make some pickles but it's hard when you only have 2 hours in the evening. I'd appreciate any ideas.

    Tonight's dinner is an easy "heat & eat" one--BBQ sandwiches with ranch crinkle fries--the pork is a 'yellow tag' sale I got from Food Lion last week, and the fries are fresh from the freezer to the oven! :)

    JDouglas--My recommendation for soft food is homemade egg salad--its a bit more 'labor intensive' than scrambled eggs, but you can make a big batch, and I think it gets better the longer it sits in the fridge

    GJan1 - Just in case you missed my post late yesterday: HAPPY BIRTHDAY!! I hope you had a great meal and a wonderful day!!

    I have eaten at Mama Dips once and it was delicious. My dad read about it in Our State as one of the top places in the South for fried chicken it was definitely tasty.

    Jdouglas - The following site has a long list of soft foods that Your DW may like. Don't laugh too hard at the website name! It lists a variety of veggies, fruits, proteins, breads, pasta, etc that look pretty tasty to me. And I'm so sorry she has to be on a soft food diet again. Thinking of you both.
