    Obviously, my recipe is not the light version. LOL ;) I often add cooked crumbled bacon or diced ham as well. Great idea to use croutons for the crust.

    jdouglas13 - I am glad you get a break for a couple days. Get some rest! And thank you for sharing your quiche recipe.

    barbiedoll1967 - Below is the link to the basic quiche recipe I use, but I added a light coating of crushed caesar croutons to the bottom of the pie plate as the "crust". I don't like a traditional pie crust for my quiche. Then I beat 5 eggs and 1 egg white and then added 1 cup shredded cheese, 4 oz sauteed mushrooms, 1/3 sauteed onion, 1/2 of a 10 oz box of frozen spinach (cooked and water squeezed out), pepper, salt and garlic powder. Mix is all up well and pour it into the 9 inch pie pan. Top with another little sprinkle of cheese (I used Mexican 4 cheese today). Bake for about 30 minutes at 350 degrees.

    That quiche sounds fabulous! Barbiedoll, the way I make it is to combine about 2 cups of room temp (or cold) lightly sauteed or steamed veg, eggs beaten with half & half or heavy cream, put everything into a frozen deep dish pie shell, top generously with shredded cheese, and bake until no longer jiggly in the middle. I will try to dig up my recipe for more specifics for you.

    I'm strongly leaning towards M&C for dinner tonight with a side of steamed broccoli. We have had a week and a half of running every day, and I am exhausted. Really looking forward to a couple of days off.

    And, good news! HT has their $9.99/lb sale on my fave parmigiano starting tomorrow!

    Tonight I'm having a leftover burrito from lunch yesterday at Moe's. Plus free queso from Moe's.

    Faye your veggie quiche sounds good. How do you make it?

    I got eggs at the Walmart in Danville last Saturday for 52 cents. YIPPEE!

    Tonight we are having veggie quiche with mushrooms, onions, spinach and cheese and a side of fruit salad (I'm using the 53 cent per dozen eggs from the Lidl opening).
