Dinner tonight is either leftover beef stew on homemade biscuits with butter beans and creamed corn or leftover sandwiches with homemade antipasta salad. A friend of Momma's stopped by for lunch and brought sandwiches from a local deli. It was a really nice visit and there is enough for another meal with the pasta salad added.

I bought some huge sweet blackberries from the farmers market today. I think I will make a cobbler with them tonight.

barbiedoll1967 - I usually use olive oil spray or a little olive oil, garlic powder or minced garlic and pepper. Tonight I will use olive oil spray to get them started as well as minced garlic and then add a touch of teriyaki sauce since the meal has an Asian theme tonight.

aerogirl2084 - that sounds really good! Let us know what you think and if you have the link to the recipe, please post it.

jdouglas13 - I have never used thyme in my sauteed squash. I'll have to try it. Thanks for the idea. :-)

Tonight I'll be trying my hand at an Andouille pasta skillet recipe I found online--will have to let y'all know how it turns out :).

BarbieDoll - I normally saute squash and onions in a little bit of butter. I start the onions first and then add the squash but I like my squash a little firm. Enjoy

Last night we had homemade spaghetti and meatballs with leftovers, so I'm thinking tonight will be round 2.

The sautéed squash medley sounds really good. Barbiedoll, I just use a tiny drizzle of oil when I make it, along with some garlic and just a teensy pinch of thyme.

Faye, when you cook your zucchini, squash and onions, do you cook them in oil or use spray? I have some squash from my garden and was thinking about fixing squash and onions.

Tonight we are having teriyaki chicken, sauteed zucchini, squash and onions, veggie egg rolls, Mandarin orange slices.
