Build your own chef salads to use some of the ham from Easter. Will have the rest of the rolls on the side. There is definitely a ham theme in our house this week :)

The rose (accent on the e) wine tail is a cocktail. Rose wine, vermouth, club soda and grapes floating in!!!
    It was pink deliciousness!

coupon4me - your Easter menu sounds like it was amazing! But, what is Rose wine tail? I'm so confused. And thank you for the Indian sauces tip! I will definitely take a look.

jdouglas13 - you definitely have a lot going on with the house closing this week. I'm so excited for both of you! Celebrating with napoleons sounds like a very good plan.

Faye- we do Indian every few weeks in our house. In the international isle in HT there are tons of jarred sauces you can simply add to cut up chicken. Service with brown rice and add in a can of peas and you have a very frugal healthy option. The sauces often go bogo so you can get for $2. They say the jar serves 3 but I stretch that a bit.

Hey everyone! :) Life has been crazy busy lately, so I haven't been around as much as I would have liked.

We finally had roasted sausage, peppers, onions, and grape tomatoes over pasta on Sunday, with leftovers last night.

Tonight looks like M&C with roasted broccoli for the side.

I've been trying to find a bit of time to make napoleons for dessert. Maybe tonight? Super easy to do: I use frozen puff pastry cut into squares and baked, cut in half and fill with vanilla pudding made with H&H, top with a powdered sugar/cream/vanilla glaze and then top that with a swirl of melted chocolate chips. Let the frosted squares set up for a bit in the fridge before you fill them. So good!

Need to find a recipe to use up the rest of the Easter lamb. Sliders were yummy last night, so may just repeat those....

I didn't have my BLT last night so it's back on the menu for tonight.

Tonight we are having salmon burgers, roasted red potatoes and salad.

After having some wonderful Indian food at Azitra in Brier Creek this weekend, I was craving Indian last night. I stopped at Trader Joe's while I was in Raleigh yesterday and picked up a frozen chicken tikka masala entree with rice and garlic naan bread. Both were very tasty and totally hit the spot. Of course it was not as amazing as the tikka masala from Azitra, but it was a more frugal and convenient substitute. My next goal is to start making it at home so I am looking at recipes.
