Here's our menu for the rest of the week:

Veggie burgers on wheat (with cheese, tomato and spinach) and baked sweet potatoes

Creamy baked chicken on penne and a spinach salad

Teriyaki tofu with broccoli, mushrooms and onions, veggie egg rolls

Shrimp salad on croissants, steamed carrots

    Thanks everyone for b-day wishes for my Mom. It's been quite a journey these last few months, but I'm so glad we're here. We actually set up a table up in our part of the house, lit a fire and the candles and had such a fun dinner party (with the champagne that we ended up not drinking on new year's eve lol!).

    And yes... the fried chicken was amazing in the pasta. I used the applegate chicken tenders from HT super doubles. Not typically a frozen chicken person, but it was really good!! Such a simple meal, and a reminder that even simple meals can be incredibly special :)

    Observant, I use a cast iron pizza pan that I preheat in the oven on the lowest shelf. When I shape the dough, I put it on a piece of parchment and it all goes into the oven on the pan. About half way through, you can remove the parchment or not. Since I've been making it this way, the dough is always cooked through with no problem.

    This one is very similar to the one I have:

    GatorGirll, I never thought to put barley in pea soup. Sounds really good. I love barley in soup!

    Faye - Sounds perfect ! Thanks for the sales !! - I wish i could get the ones at Lowes Foods ! Unfortunately I can not get out of my driveway (1000 yards of frozen snow/ice with very little melting so far ) . Friday is an all day trip to Duke Hospital for tests and appointments - maybe I can pick some up on the way home !

    RFB - Happy Birthday to your mom ! I am sure this is her Best Birthday since you are there !

    observant - I figured that since it will be so warm on Friday that shrimp salad would be a good warm day meal.

    Here are some shrimp sales good through today:

    Food Lion: Food Lion raw shrimp, 16 oz bag, frozen, $5.49 or Food Lion cooked shrimp, 16 oz bag, frozen, $6.49 (very good deal on the raw shrimp!)

    Harris Teeter: EZ Peel shrimp, 2 lb bag, Buy 2 Get 3 Free, limit 5 = $14.39 per bag

    Lowes Foods: Raw Argentine shrimp, jumbo, BOGO

    Publix: Large white shrimp, $6.99/lb

    YBAVERAGE2003- sounds delicious! I use a balsamic glaze every day for my lunch. Will try it on a dish like this!

    Everyone's dinners sound SO good! Tonight is my Mom's b-day so I'm making pasta with fried chicken tenders cut up, roasted carrots, peas, and a lemony parmesan cream sauce. I've never had fried chicken in pasta before but thought I'd give it a shot, and go all out for B-day festivities :)
