    Leftover lasagne tonight
    Tomorrow night grilled boneless pork loin & mac & cheese & green beans
    Thursday night- IDK, yet
    Friday- Always pizza night

    YBaverage, sometimes when I have a bit of leftover steak or roast, I turn it into steak salad. Thinly slice the meat and add greens, radishes, scallions, sweet peppers, stuffed green olives, grape tomatoes, or whatever you might have included leftover roasted veg. Pretty much any vinaigrette is delicious with it, as is crumbled gorgonzola or blue cheese if you like it.

    RFB, both of your potato ideas sound yummy! The roasted Dijon/thyme and spinach stuff sweet. I'll have to remember them.

    Lindabates, you M&C is always near and dear to my heart.

    Our dinner with friends last night was amazing. Tonight, we are having leftover Caesar salad, leftover lemon meringue pie, and hopefully something resembling an entrée LOL ;)

    Tonight we are having turkey and swiss sandwiches on rye using the leftover turkey from last night. Sides of leftover noodle kugel and veggie tray with ranch.

    RaleighFoodBlogger - I am all about anything involving sweet potatoes so thank you for the recipe! Using the spinach gratin with the sweet potato should work really well.

    ybaverage2003 - a stir fry would be a great way to use up the extra prime rib.

    Last night I made a big pot of beef vegetable soup using leftover prime rib. Need to find another way to transform leftover prime rib for tonight. Maybe a stir fry....

    JDouglas- great idea on the fish from yesterday!

    Today and tomorrow I'm working on finding creative ways to use up our Christmas leftovers, since we ended up having more than I thought. So, today I'm cutting up the last of the chicken cordon blue and making an arugula salad, also including the last of the roasted dijon thyme baby potatoes.

    And tomorrow, I'll use up the last of the spinach gratin (Barefoot Contessa- the best!) in a recipe for a twice baked sweet potato (I'll just use it and add some cream cheese which was free at HT, and mozzarella cheese on the top, which was 46 cents along with the scooped out sweet potato). And some kind of veggie on the side. YAY for leftovers!
