    JDOUGLAS13 -Last week's whole chicken I placed on the rack in my slow cooker - seasoned with my favorite spices ( sage, pepper, rosemary. garlic, etc.) .
    You can also use fresh veggies as the rack ( carrots, potatoes and onions ) - perfect stock for later use !!
    I put water or stock under the rack and let it cook until meat thermometer shows it is 160 degrees or above .You can stuff the chicken before cooking if desired.
    We love chicken breasts grilled on the George Foreman - juicy and done in 3 minutes ! For flavor you can use spices or lightly brush with mayo/spice mixture on each side -it is delicious when you cook the chicken on the propane or charcoal grill as well
    For BBQ'd chicken I crumple aluminum foil into cast iron "bean" pot to make a rack - it give the chicken a nice coating and allows any grease to drip out and away .

    Jdouglas- I only cook Chicken breast and love them cook all types of ways but my all time favorite is in the rotisserie.

    jdouglas - I normally brown chicken breast and then finish them in the oven. Browning them helps hold all of the juices in. Of course I season them with garlic powder, onion powder, sea salt or kosher salt, and lots of black pepper. If I am baking a whole chicken or the chicken bre@st, I cook them just like a turkey including the bag.

    ascherer - YUM! I have heard great things about it although I have never been. Enjoy and happy birthday to your Godson!

    Jdouglas - I cook chicken breasts. Tonight I decided to do them in the skillet though with teriyaki sauce. When I bake chicken breast, I often cook them in a sauce including progresso cream of mushroom soup and light sour cream with parmesan cheese. It's great over egg noodles - like chicken stroganoff. And I use lots of seasoning (garlic and pepper mostly).

    Tonight is leftover macaroni casserole (that's what my husband calls it), leftover mashed potatoes and corn. Trying to clean out the frig!

    Last night was rigatoni and sausage in spaghetti sauce. Super easy sauce to make because I do it all in the oven. No stovetop splatters and very little stirring required.

    Tonight might be something with shrimp, but I'm not sure what. I never did make the corn chowder with shrimp, so maybe that. On the other hand, DW needed the heat on today, so I'm feeling very overheated. Maybe I should make Caesar salad with shrimp instead.

    So how does everyone do their baked chicken? Is it a whole chicken? Parts? Boneless? Do tell! :)

    Tonight we are having baked chicken breasts, rice, steamed broccoli.
