Thanks for the tips, YBaverage! The flavor was pretty good based on the little that I ate. The sauce was made with Progresso cream of mushroom soup, sour cream, grainy Dijon mustard, a little garlic, a package of shredded cheddar, and some milk to stretch it. I think I'll saute the onions next time as well, because they definitely tasted raw.

On the plus side, I made tomato chutney yesterday. It was delicious, and freezes well. It is good with brie on slices of toasted baguette.

So far, for dinner, I know I'm having an baked stuffed artichoke. The rest is still TBD.

Jdouglas, try boiling your sliced potatoes before assembling your scalloped casserole. Then you are just heating through and 60 minutes should be plenty. As for the chops, maybe try the same thing. Cook them on the stovetop or grill or in the oven by themselves and then add them to casserole to heat through and combine all the flavors. Don't give up yet !

Lasagna. It was tasty :). Tonight we are doing leftover chili or the lasagna.

I just put the chicken in the slow cooker with seasoning and roasted garlic balsamic dressing. Side of roasted carrots, sweet potatoes and asparagus. Rye bread on the other side. :-D

jdouglas13 - bummer on the chops and taters.

Everyone's dinners tonight sounds delicious and thanks to everyone who shared the weekly meal plans yesterday. So many tasty ideas!

twinredheads - did you go with ziti or lasagna last night?? Either one is a win in my book!

So last night I made the scalloped potato-pork chop casserole that I mentioned yesterday. I even dragged out the mandoline to slice the potatoes. After baking covered for an 75 minutes and uncovered for another 40, the chops were still tough and the potatoes and onions were still raw. I really love scalloped/au gratin potatoes, but after so many failed attempts, I have conceded defeat. I won't bother sharing the recipe.

Tonight, I'm looking for inspiration. I think DW is hungry after the dinner fail last night. :p
