    I was going to join the pantry challenge (Raesmom's version) but I think tonight is going to be a celebration dinner out. I finally got released by my Doctor to take a shower. I can't wait to wash my hair. I fell in DC on Wednesday and have 12 stitches in my right knee. I'm healing fine and get the stitches removed on Friday.

    Tomorrow dinner will be Salisbury Steak from the freezer using beef stock from the pantry, mashed potatoes from a box, and a veggie from the freezer.

    Tonight we are having enchiladas that I made using a mix of ground beef and ground chicken, both on mark down at Food Lion. They're rolled in flour tortillas with red enchilada sauce and a healthy amount of cheese ;-) haha Sides will be Spanish rice, black beans, corn, and I'll make a couple guacamole salads.

    Still on track with the leftover garlic crock pot chicken tonight. But I changed up our lunch a bit, as inspired by the pantry challenge. I had a can of garbanzo beans in the pantry, plus some fresh basil and a shallot left from the food box last week. I added in 1 Tblsp. each olive oil and red wine vinegar, plus 1/4 c. shredded parmesan cheese (that I've had for weeks from a past sale) and a minced glove of garlic. Then I added some salt-free seasoning. Delicious!!! Really nice wrapped in a few red cabbage leaves.

    Twinredheads, I'm so glad you mentioned the stuffed peppers. I have a couple of yellow ones in the fridge that were intended for stuffing that I forgot about. Hopefully they are still good. We like ours with rice, spinach, crispy prosciutto and parm.

    Last night we had a change of plans too. We ended up having a sheet pan dinner with roasted Italian sausage and cauliflower topped with garlic, breadcrumbs, parm, Italian seasonings, and a drizzle of EVOO.

    Looks like tonight we are having the chicken, rice, and grilled veg I had intended for last night.

    Change of plans, tonight is gourmet buffet and tomorrow will be homemade sauce with lots of fresh veggies including mushrooms, green peppers, onions, garlic, tomatoes and cucumbers with pasta and mozzarella stuffed homemade meatballs.

    Options for tonight include chili, ribs, cold macaroni and tuna salad, corn on the cob and baked beans, baked chicken and rice with veggies.

    We will be back to our regularly scheduled dinner program tomorrow :)

    I would love to participate in the pantry challenge, but mine is pretty empty already. bored with same old stuff. Doing a grocery run tonight, so hoping for some inspiration !

    I follow her notes below the recipe and just make the stuffing in the Crockpot because we do not like our peppers mushy :)
