    Aldi in Durham has stocked the 3 ct. pkgs of red, yellow, and orange peppers pretty consistently since they opened several years ago. :-)

    I did find the peppers, and I was very pleasantly surprised to find that it was red-yellow-orange. I've never tried the orange one before. I hope they continue to offer them. Great deal!

    jdouglas13 - did you find the 3-packs of multi-colored peppers at Aldi? I found my receipt and they were $2.49 for the 3-pack. Enjoy the roast...or eggplant. lol

    Oh, and I forgot to mention, that I also bought some gorgeous blueberries at Aldi as well as a hopefully ripe watermelon, but dessert will be vanilla ice cream with chocolate syrup LOL.

    I bought a whole pork loin for about $8 which is on sale at HT through today for $1.99 lb. We should easily get at least 4 meals out of it. Tonight we will have some as a roast topped with mustard and herbes de Provence, baked sweet potatoes, and something green. I got some pretty nice asparagus today at Aldi, so I might add them to the mix.

    I should mention that's Plan A. Plan B is eggplant parm for me, and hot dogs on the grill for DW. We'll see how the weather is and how much energy we have. This heat really knocks us out!

    beef enchilada, rice and beans. For me tacos since I can't have cheese. But that's okay since I love tacos.

    We loved the Korean restaurant we tried last night! The food was delicious! And we had last minute company stay with us so they offered to pay for our dinner :-)

    Tonight we are back to just the 2 of us for dinner. We're having tuna steaks that I got on clearance at HT for only $1! I'm making an Asian sesame ginger marinade and cooking them on the grill so they don't get over done. Sides will be the rest of the fried eggplant that didn't fit in the parmesan this weekend and the last couple mushrooms I got on clearance from Kroger this weekend that will be stuffed with frozen spinach, bleu cheese and mozzarella cheese. We also have fresh watermelon and grapes to go with it.

    Tonight we are having chicken enchiladas, corn, and a tomato and cucumber salad.

    Coupon4me - thanks for the follow-up on the eggplant. Good to know it worked so well in the slow cooker. And I love your breakfast casserole ingredients. I could eat breakfast for dinner almost every night!

    Faye you asked about the eggplant in the crockpot yesterday....I hadn't done it before but it worked out fine. I kind of used that in place of potatoes to go with the roast. I seasoned it with garlic and salt and pepper. I only cooked it for 4 hours so it wasn't mushy either.

    I made a breakfast casserole last night after dinner for tonight's meal. It has tator tots, country gravy, eggs, sausage and cheese. We will have that with cantaloupe (1.99 last week at HT and it was super huge! )
