    Monday we had stuffed peppers in the crockpot - thanks to someone posting here on the blog!!!! Made with the stoplight peppers from HT a week (or more maybe...they still were ok though) and meat we had gotten from HT for only 2.99 a lb very frugal dinner. Both kids ate it too!!!

    Tonight we are having chicken salad made with apples served with cr*ckers and probably a can of of those chilly kind of nights!

    Tonight we are having cabbage casserole. Here's the recipe: I use about twice as much cabbage as the recipe calls for because it's a great way to get in some extra veggies ;-) I went ahead and baked it on Sunday when I was doing a bunch of other cooking so all I have to do tonight is add the cheese and pop it in the oven for 15 minutes. I've made this once before and even my husband who can't stand cabbage ate 3 servings! We'll have caesar salad and fresh cantaloupe on the side.

    Hoping for a break in the weather to grill some ribeyes outside; otherwise will cook them in cast iron pan on the stove. Craving baked potatoes and have coleslaw fixin's to go alongside.

    Ascherer, I'm a bit envious of your traveling! I know it can be grueling, but with The Princess needing 24/7 supervision the last 3 weeks so she doesn't tear out her sutures, I have a bad case of cabin fever. :) Hopefully your traveling is all for fun reasons. For your baked ziti, undercook your pasta by at least several minutes, and as YBaverage suggested, freeze it before you bake it.

    Last night we had stuffed yellow peppers with spinach, mushrooms, grape tomatoes, crispy proscuitto, onion, garlic, chicken broth. Very tasty. Sunday's dinner was totally embarassing: Stacy's pita chips and Krispy Kreme. LOL. Tonight might be leftover pizza that I made a couple of nights ago, maybe with salad.

    YBAVERAGE2003 - Thanks. I'm just frazzled because I feel like all I do is unload the car, unpack the bags, laundry, repack the bags, and reload the car. Traveling for work is so much easier than this because I just stay there for weeks. One day we will be back to normal. =^-.-^=

    Change in yesterday and today's many. I was supposed to make chicken thighs yesterday and we were going to have that yesterday and today but Rae requested corn and bbq chicken (leftovers) and I had leftover sloppy joes. So today I am making corn chowder which should last 2-3 days. Maybe some brownies for dessert.....

    Ascherer, freeze your ziti before baking. That way, the pasta won't get overcooked when you use the frozen half. And don't stress over your meal plans..think breakfast for dinner or crock pot meals or nice salads to get you through !!
