    Oh! The 12 yo is on fire tonight---she suggested you take a loaf of french bread slice it, lay a slice of ham on it, top with lightly poached asparagus and a slice of swiss. Run it under the broiler for a wonderful breakfast/brunch/late night treat. We have that very thing quite a lot with proscuitto wrapped around the asparagus and topped with swiss but ham is ham is ham!

    Thank you all for the suggestions. I do have some ham slices in the freezer from Easter. I will pull that out for sandwiches. I had not thought about veggies to snack on but that is a great idea. I do have almost everything for a baked ziti. Thanks again.

    Tonight we are having make your own pizzas with pre-made crusts, and everyone can make their own with choices of toppings: mushrooms, spinach, black olives, pineapple, chicken, sausage (veggie sausage, actually), tomatoes. Can you guess what they will be having for lunch tomorrow?? :-) Side of watermelon.

    ascherer - you got some great suggestions for meals for the cabin. Be sure to also bring some no mess, grab and go and late night snack items like apples, cheese sticks, pretzels, etc. It sounds like many of your meals may not be in the cabin, but they will probably want munchies late at night and in between wedding weekend activities. There is a good deal on Chex Mix starting tomorrow at HT as well. Have fun at the wedding!

    Oh I am with YBAV - Meatballs in a crockpot! Perfect!

    Last night we had the meat I had in the crockpot over the weekend we had it with Simply Mashed Sweet potatoes (49cents at HT last week) and peas.
    Tonight is Shrimp with Marinara sauce, pasta and zucchini and squash spirals.

    Dinner tonight---I've been very uninspired this week. We have leftover poached chicken and leftover ground turkey. Thinking I'm going to use the chicken in salads tonight. And I just got a request from my 12 yo to make a lemon cake.

    Ascherer, bake a ham here to take with you. That's our go-to at the beach. You can either make sandwiches with it, just put it on the counter and pick off of it (my husband's favorite thing to do), or make it a simple meal with boiled potatoes (add parsley for color) and broccoli or asparagus. Yum!

    Ascherer, I agree with casseroles since they are easy for people to just heat up a piece when they are ready to eat. Anything that is easy for people to make on their own time works well on our family vacations. Breakfasts include cereal, oatmeal, grits, muffins, etc. Lunches we tend to do sandwiches. Not just cold cuts. Also PB&J, BLTs, subs, etc. Pastas and soups are easy for supper since they can sit in the crockpot or on the stove on warm for hours and be ok. Have a fun trip!

    Tonight we all have the night off from the kitchen! We are taking our exchange student to a rodeo to show her some more Southern culture. We will either pick up food on the way there or eat at the concession stand there. However, last night I made some gluten free fried chicken to take with us for my mom to eat as we've learned there isn't anything she can eat at the rodeo. So I'll warm that back up under the broiler right before we leave. Otherwise no cooking or cleaning :-)

    Grab your crockpot to make meatballs. They will keep warm for hours for everyone coming and going. Salad fixings ot just carrot/celery sticks and rolls for meatball sandwiches. Also, think big one dish meals, like lasagne or BAKED ZITI !! :)

    Tonight is meatloaf. That is as far as I have made it.

    I need some help. We are staying in a cabin for 4 nights this weekend with 5 friends (TT-2 people, Fri-5, Sat-7, Sun-4). We are the older couple and thus are the "House Mom & Dad". We are all going to a wedding on Saturday night. Everyone will stay and go as they please but I still think I need some food in the house even if it is only to feed the two of us. I am making a breakfast casserole to have in the fridge. Of course I will take nuts, goldfish, sandwich stuff, etc. What else can/should I make/take? I have no clue what kitchen stuff will be available at the cabin. Thanks.
