    Total change of plans for us for dinner. One daughter is not here for dinner. One wanted pizza so she got a frozen pizza and I am having a protein shake after an awesome cardio dance class that almost killed me. I guess the chicken will be served tomorrow night. LOL It's all good. As long as we all get food, that's what matters, right? :-)

    raesmom1612 - have a bite of 2 of your dessert buffet for me!! :-)

    UNCW_Ash - I do love shrimp scampi! I have some shrimp in the freezer so I may have to amend the menu yet again this week.....

    Baked chicken in the oven with some adobo and chicken stock, Mac and cheese and corn on the cob. Still eating piea, cupcakes and cheesecake.....really trying to make them stretch lol

    Coupon4me, for London broil, you might be better off making it in one of these two ways. You can do it in the slow cooker like a pot roast. A lot of folks here like it that way and have great success. In cold weather, I like it that way as well. I use a can of Progresso mushroom soup, a pkg of dry onion soup mix, some wine, garlic, onions, mushrooms.

    In summer, I like to marinate it and then grill to medium rare. The marinade is a mixture of soy sauce, Worcestershire, and extra virgin olive oil (veg oil is fine too). I season it very generously with garlic powder and black pepper. The leftover grilled steak is really good the next day, sliced very thinly, and added to a mixed green salad with whatever veg you like. A slightly mustardy vinaigrette is good with it.

    Coupon4me- I actually use cube steak. Harris teeter puts it bogo every so often. I hv never used London broil. Wish I could be more help

    Thanks for the info on your cubed steak...what kind of meat do you use TRICHARDSON? Could I use a top round london broil I just got on sale at HT for 3.99 lb?? I think I might try that soon if you think it would work....?

    Tonight is meatloaf made with green peppers, roasted potatoes and creamed spinach.

    I normally cook mine in the frying pan with a little oil until almost done, adding onions near the end. I drain it, make my gravy, (I use the pkgs of mccormick brown and mushroom- using just a tad bit more water and it will thicken up in oven ) I then put it in a casserole dish, pour the gravy over it , cook on low somewhere around 275- 300 degrees for about 30 minutes. It comes out fork tender!! The time in the oven makes the world of difference.

    Trichardson, would you share how you make your cubed steak? Someone posted how they make it a while back, but I can't remember the details.

    Faye, the only reason we're having mashed tonight is because we had the last two potatoes big enough to be baked last night. Only little ones left. Although, DW does really love mashed and I'm trying to let her know how special she is to me. :) The cake is in the oven! Woohoo!

    Meredith, your quesadillas sound yummy. What kind of tortillas do you use for them?

    Change of plans tonight. The one who requested Brasilian won't actually be home for supper so I'm switching it over to Mexican for the evening. Quesadillas with chicken, black beans, onions, peppers, mushrooms, tomatoes, olives, and avocado. Fresh strawberries on the side. I'll still cook the Brasilian and just send it as school lunches the rest of the week :-)
