    meredith88 - I agree with raesmom - add some spices to the casserole. I always add garlic powder and pepper to mine. You can sprinkle them on top and just kind of push them down a bit with a spoon. Let us know how you like it! And your breaded fish really sounds amazing.

    On a side note, I was happy to see the frozen yellow squash slices on sale today as part of the HT $1 frozen veggie sale. That's a good price and I did not even realize they had an HT brand of frozen squash. They will be great with onions in the skillet!

    Last night we ended up having burgers on the grill with some potato salad. I made enough potato salad for a small army. Needless to say, there is a lot leftover.

    Tonight we're having spaghetti with Raesmom's mozz stuff meatballs that I made and froze recently. Looking forward to that!

    YBAverage and Meredith88, both of your dishes sound really good. You just can't go wrong with breadcrumbs and cheese. :) I make baked fish filets that are similar. Instead of butter, I spread the filet with mayo, and then top with the breadcrumb/parm/herb and garlic mixture. I bake it on parchment lined foil so it doesn't stick and there's no clean up afterwards. Really good with oven baked steak fries served with malt vinegar.

    Thanks Raesmom! The fish is so easy and definitely worth a try!

    I didn't even think about adding spices to my casserole. Oops. Maybe I can put some on top before I bake it tonight.

    That fish sounds good meredith! I may have to try that. DH is the one who makes fish here (only bc I dont know how) but he usually deep fries it and I'm not a fan of the greasy stuff. RE the breakfast casserole, let me know how it comes out. Although I can't live without my oven, I make my breakfast casserole in The slow cooker. Same concept but I use browned ground sausage and i add a bit of spices to it (parsley, oregano, adobo, etc.) Good luck :)

    I made the new fish recipe last night and it was AMAZING! It's super simple. Baked Flounder Au Gratin. You put the flounder filets on a sprayed baking sheet and baste the tops with melted butter. Then mix 1 cup of bread crumbs with 2/3 cup grated Parmesan and some spices with more melted butter. Add the crumb mixture on top of the flounder and bake 15 minutes. That's in. Dinner is ready in 20 minutes :-) The fish tasted so much better than any fried fish I've ever had at a restaurant.

    Tonight is my first ever breakfast casserole. I assembled I last night. Hash browns, bacon, cheese, peppers and onions covered with an egg milk mixture. So all I have to do tonight is put it in the oven for an hour and throw some canned biscuits in the oven for the last 10 minutes. We'll have jelly for the biscuits and lots of fresh fruit options.

    Tonight is spaghetti with meat sauce. I am planning on adding sliced squash and mushrooms to the sauce.

    Tonight we are having salmon lettuce wraps with salmon burgers, sauteed mushrooms and onions, provolone cheese and salsa. Roasted sweet potatoes and grapes are the sides.

    Last night was taco night So tonight is leftover tacos with all the fixings and we are still munching on the banana came dessert.
