    Meredith, your soup sounds perfect for tonight. If I can scare up some good bread in the freezer, I have some Progresso soup I might make tonight instead of the antipasto tortellini. That can wait a day or two.

    I am super behind on my cooking chores that I had planned this afternoon. The Princess' vet appointment lasted 2 hours. Let me tell you, she was not a happy girl. Neither was her Mama when I saw the bill. Worst part, this is only the beginning. My sweet baby has a malignancy that's going to require surgery. Send good thoughts everyone.

    I changed our menu tonight due to the weather. So instead of veggie quesadillas we will be having vegetable beef soup :-) I had 5 small bags left in the freezer from last fall so they thawed out and just need to be heated and we'll be ready! We're still having roasted brussel sprouts as the side as well as a fresh cantaloupe I picked up on my trip to Aldi last night.

    Yay on the stuffed meatballs jdouglas!! Let us know how they turn put. Good luck with the Princess and her appointment. That pasta concoction sounds really tasty.....mouth watering. I dont even want my pork chops anymore lol

    YBAverage, your menu sounds wonderful -- even more so since your DH is doing the cooking! :)

    Although it would have been a good night for something hot like stew or soup, tonight we are having a new pasta concoction. Antipasto tortellini. Basically tortellini in Italian dressing (or maybe pesto) with leftover grilled asparagus, slivers of very peppery salami and prosciutto, fresh mozz, marinated artichoke hearts, green olives, roasted red peppers, mushrooms and whatever else I can come up with. We'll see how DW likes it.

    After The Princess is done with her annual vet physical (oh joy), I will be in the kitchen making mozzarella stuffed meatballs and roasting my 7 containers of HT sale mushrooms. Why I thought I needed 7 is beyond me. Sort of like my multiple packages of romaine hearts. SMH.

    My DH is cooking tonight. I am told the menu will be Chicken Cordon Bleu and bok choy. Can't wait !

    So I pulled out a pack of pork chops last night and there were 4 in the pack. Since it was just Rae and i, I only made two last night. We had creamy pork chops with mashed potatoes and peas. Since the other two were already defrosted I didn't want to refreeze them so I made a marinade which consisted of vinegar, adobo, sazon, parsley, basil, and a touch of water and let my pork chops sit in there over night. So tonight we will put those in the oven and serve with rice and either beans or corn.
