    Great dinners everybody!

    I love the grilled pineapple with sauce, chocolate cupcakes, stroganoff.... the caravan could have made the rounds in style tonight!

    Jdouglas - congrats on getting dinner in the oven so early!

    We had a gourmet buffet of sorts here - leftover spaghetti and chicken enchiladas and fruit.

    Meredith88, your grilled pineapple sounds wonderful, as do YBaverage's chocolate cupcakes! We need to get the caravan fired up and on the road again!

    I am very proud to announce that dinner is actually in the oven and it's only a little after 6 pm. That's a huge accomplishment for me. We've been having dinner really late for a while now -- like 9:30 some nights. I just haven't been able to get myself moving.

    Last night we had a house full of teenage girls from the team for supper. I made a turkey loin out of the freezer that I got on clearance at FL a couple months ago. I made mashed potatoes with the last of the red skin potatoes from my HT Evic deal two weeks ago. I also made steamed broccoli, carrots, squash and zucchini from a HT sale last week. Lastly I grilled the pineapple that I bought at Aldi three weeks ago that *finally* ripened. I grill it with a honey cinnamon marinade that I make. We also had caesar salad from the ongoing Aldi sales. I fed 6 grown adults and still had some food left for lunches :-)

    Tonight we are taking the night off and using our Carrabba's coupons from their online giveaway in January so dinner will be free with no cooking and no cleaning!

    Last night we had a freezer meal that one of the girls brought by when baby ziti was brought home which I completely forgot was in the freezer. Tonight is another round of corn chowder :) I have to take advantage and make it as often as I can while DH is gone....he doesn't like the corn chowder. He will eat it, just prefers I make food with "a lot of real meat" lol

    One of the girls is bringing by Mexican meatball soup so we will have that tomorrow or Thursday and I think I will treat Rae to some pizza on Friday when DH gets home.

    Coconut pie sound delicious jdouglas!! I still think nothing compares to your cheesecake ;)

    It's still early, so anything could change, but I think tonight we are having chicken something. Maybe baked chicken drumsticks with roasted broccoli (added to the same lined sheet pan the chicken is on towards the end for easy cleanup) and rice. The coconut pie I made over the weekend is already history, so candy for dessert LOL.

    Meatloaf using ground pork (previous LF sale) , boiled red potatoes, green beans and salad. Possible homemade chocolate cupcakes for dessert.

    Turkey Kielbasa was not a hit last night so no leftovers.... so we are headed to the Ale House to use Jingle bucks that expire the end of the month.

    Changed my mind and decided to make the stroganoff tonight. Will serve with roasted asparagus and biscuits.
