    Tonight's roasted veggies were so good! I used sweet potatoes cubed, mushrooms halved, an onion cut into 8 thick chunks and a bunch of baby carrots. Used olive oil spray, pepper, garlic and a pinch of salt cooked at 400 degrees until done. So good. So healthy. Happy me. :-)

    Last night we did whatever you want night since it was my son's 7th bday - he got to pick whatever he wanted....
    Tonight we are doing Bacon Wrapped, Cream Cheese Stuffed Chicken Breasts with Broccoli and whole wheat pasta

    Since it is just too dang cold to grill tonight, I think was are going to go to Outback with my free app coupon. Since I like the quesadilla app as an entree that works out well. I will just add a side salad. Happy Fat Tuesday everyone.

    YBAverage, wish I could help, but all I could think of was black bean soup with the addition of deboned cooked chicken and some chunks of sweet potatoes. Not much different than Meredith's suggestion.

    Tonight looks like leftover sausage/mushroom pizza and salad. Super yummy coconut pie for dessert.

    Faye sorry it took so long to respond about my 1, 2, 3 dip. It's 1lb of either ground pork or ground beef, 2 eight oz packages of cream cheese and 3 cans of Rotella tomatoes. Serve with tortilla chips. I'll be doesn't look very appetizing but once you try WILL be hooked. I made it for a b day party over the summer and no one wanted to try it, once that first person tried it, the pot was cleaned out and I had 5 people ask for the recipe!!

    Ybeaverage2003-the taco soup that I make includes chicken and black beans. I also add corn, pinto or kidney beans, enchilada sauce, cream of chicken soup, chicken broth and a packet of taco seasoning. Throw it all in the crock pot and low for 8 hours or high for about 4-5. Is the chicken boneless/skinless?

    Tonight is leftover Alfredo chicken brought by a friend last night.

    Tonight we are having pulled pork bbq sandwiches. I cooked the pork steaks in the crockpot last night so they are shredded and ready to go. We have some leftover hamburger buns and coleslaw from our party last weekend that we'll use. Fries have been requested so we'll bake some Ore Ida fries from a HT sale a few months ago. We'll also have a side salad with ingredients from recent Aldi sales as well as some fresh fruit and veggies. A simple but hearty meal for this weather :-)

    YBAVERAGE2003, you could make chicken chili. Perfect for this chilly weather! If it were us we would use it to make Brasilian food as they use a lot of chicken and black beans. Feijoada is very good!
