    Faye, it would be really good on tofu. I put scallions, sliced water chestnuts, and broccoli into the mix. You could definitely sub tofu for the chicken. It's so good, DW even eats the broccoli.

    The chicken didn't defrost, so it looks like beef stroganoff is on the menu tonight after all.

    Faye, she is 16. She's from Brasil and will be here until the middle of June and then hopefully coming back in August for another 10 months. Luckily my husband is fluent in Portuguese because she doesn't speak much English yet :-)

    Tonight is chef salad. Momma has some lettuce and eggs that needs to be used. There is a pound of bacon I need to cook. Cheese and craisins are always in the house. I will pick up a cuke and tomato at the store. If I look hard enough, I can probably find some almonds to toast.

    To whoever suggested that baked ham with applies - that looks really good and I think I will try it. I will post how it comes out and if Momma likes it.

    I just got done browning everything for beef stroganoff and throwing it in the slow cooker. We'll have that tomorrow over noodles since I think it taste better the next day.

    I have an Asian-inspired stir-fry chicken/veg recipe that I haven't made in a while -- Meredith, thanks for the idea. The sauce for my recipe is made with ketchup, fresh ginger and garlic, tamari, sesame oil and sugar. Sounds weird, but it's really good. Plan B, since it's so nice out, is to grill some chicken for a salad since we have a glut of romaine hearts again.

    Tonight we are having breaded tilapia, roasted veggies, rolls. I had planned to have London Broil but do not have time to get to the store today so tilapia it is.

    meredith88 - how nice of you to host an exchange student. How long will he/she be with you and where is the student from? The orange chicken recipe sounds great and easy enough to make. Thanks for sharing it.

    This week is very up in the air as we have an exchange student moving in with us and plans are constantly changing. So I'll just post what we had the previous night each day.

    Last night we tried a new recipe for orange chicken. The sauce is very simple using only bbq sauce, orange marmalade, and soy sauce. BBQ sauce we always have on hand from SD sales and soy sauce we just keep the packets from Chinese take-out since neither of us like it but we occasionally need it for recipes. The marmalade was cheapest at Aldi. We used organic boneless chicken thighs that were on clearance at FL. We ate it with white rice that is always in the pantry and fresh steamed veggies from Aldi. The recipe turned out really well and we liked it a lot better than the one we tried a few weeks ago!
