    Sweet D - The veggie soup recipe is super easy to make and so delicious. I am making it again this weekend when temps drop into the 30's overnight! Brrrrr. I hope you like it. And you can add chicken or beef to bump up the protein content.

    Tonight we are having spaghetti using spaghetti squash. I'll top it with a red meat sauce with diced peppers and onions. No clue about side dishes yet.

    VLYNN, here is the butternut squash soup recipe you asked for yesterday. I made this one up last year because all the ones I tried off the internet were too sweet.

    2 Butternut Squashes (5 lb total)
    4 large or 8 small Russet Potatoes
    2 Apples
    1 large Onion
    4 cups Chicken Broth
    2 blocks Cream Cheese Salt Pepper Cinnamon

    Peel and dice the squash, apples, potatoes, and onion. Add them in the crock pot with the chicken broth. Add a dash or two of salt, some ground black pepper and cinnamon to taste. Cook on high for 3-4 hours. Blend the cooked mixture to your preferred consistency. Add the cream cheese and cook on low for 30 minutes. Mix with a wire whisk until smooth. Enjoy!

    Thanks so much Observant, it really means a lot to me.

    For anyone who is interested, I just typed up the recipe for DW's birthday cake that we had this weekend. It was the white chiffon-like buttermilk cake with mocha buttercream frosting and chocolate ganache topping. If anyone would like me to send a copy, just give me a shout (and an email address).
