Jdouglas- asparagus sounds really good, too! Hope you enjoy :-)

RFB, thanks so much for the recipe -- it sounds really good! Pure Mom comfort food. :) I went to several store looking for frozen artichoke hearts to no avail, but I may try it with asparagus instead that I got at HT over the weekend with a RC.

In my travels I found a pork blade roast on sale at Lowes, so we are going to have that tonight with sweet potatoes (maybe roasted) and either roasted asparagus or Brussels sprouts. I'm trying to make DW eat healthy this week if it kills me j/k lol ;)

Jdouglas- I really like the canned artichokes from Trader Joe's, but Target also has them. I haven't tried frozen, but I'm sure they'd be great as well. Here's the recipe. It came out very good, and reminded me of my youth (although my mom added chopped chicken instead of the artichokes, and I'm sure we didn't do brown rice back then :-) I'll go ahead and give you the original, and you can adjust the veggies/meats/fats as desired.

Chicken Ham & Rice Casserole- Cook 1/2 c. chopped onion and 1 c. chopped celery in 1/4 c. butter in large skillet until tender. Blend in 6 Tblsp. flour, 1 tsp. salt, 1/2 tsp. pepper, 1/2 tsp. poultry seasoning and 1 tsp. Worcestershire sauce. Gradually add in 2-1/2 c. chicken broth and cook over medium heat, stirring constantly until sauce bubbles and thickens. Gently stir in 4 c. cubed cooked chicken, 2 c. cubed cooked ham and 2 c. cooked rice. Turn into greased 3 qt. casserole and bake at 350 for about 45 minutes.

I haven't got a clue in the world what we're having for dinner, but just wanted to pop in and say hi to everyone. :) The last couple of nights was ham/swiss/tomato sandwiches on the Kaiser rolls I made a while back and froze. Used the last one, so I'll definitely have to make them again.

RFB, your casserole sounds so good. Would you mind sharing the recipe? I love artichokes. I'm guessing you use the hearts for this recipe? It's been so long since I bought them, I can't remember who has the frozen ones. Lowes maybe?

Raesmom and Faye -- hope you are both feeling better. Sending hugs.

I made pork chops and rice with veggies last night, but Rae wanted Pizza so I popped one in the oven, of course she didn't finish it so I did.......bad idea. I was up almost all night!!! No more pizza for me for a bit.

Tonight I'm thinking Taco Soup in the crock pot, ill pick up a few of the cans that I need while on my lunch break doing my HT SD shop today :)

    Feel better Faye :)

We're having homemade veggie pizza tonight. The crust was on sale at HT a few months back. The sauce was on clearance at Kroger and we stocked up. We'll top it with cheese from the HT B2G3 sales, peppers, onions, mushrooms, olives and spinach from various sales over the last few weeks. Side salad and fresh fruit to go with it.

I hope you feel better soon Faye. You work too hard and moving was a lot of work. Did you move back to your old house? Girl I have lived here since 1970 so I really hope I never have to move. I am one of those people that thinks I have to hold onto to things just in case I should need them. I've been trying to let some things go but it's a slow process. Praying you will feel better today.
