raesmom - your dinner sounds delicious !
The seasoning packet sounds like one my crowd might like since some do not like spicy. I will look for it next trip to the store
How wonderful that your mom is HOME !
So Sorry about your grandmother ! It is so hard when loved ones are so far away !!
As Always, You and your family are in my thoughts and prayers

Raesmom - Send hugs and prayers your way. I am sure your Mom is excited to be home.

Dinner tonight just didn't happen. DH found out about a work project tonight about a half hour before he had to start it. He might be home around 9. These things happen. So it is leftovers for me.

Thanks everyone yall are always the best ;)

Looks like I may be omitted from having to go to Puerto Rico. Dad is doing better with her out there and she is still awake and alert so thats good. Mom is super excited to be home as you can imagine. Wish I was there to make her a nice home cooked meal, I'm sure one of my sisters will pick up the slack.

Tonight dinner is chicken thighs in the oven with a McCormick gourmet seasoning packet that i got on clearance which is sweet basil and oregano seasoning making "Bruschetta Chicken". I'll serve with rice and veggies BC I'm too tired (mentally and physically) to make anything else.

Raesmom, so sorry about your Grama :( Sending hugs.

Dinner? Who knows. Maybe homemade chex mix and streusel coffeecake with peaches? If not coffeecake, then a new recipe for homemade peach ice cream that doesn't require an ice cream maker. A friend of mine tried it with rave reviews. All kidding (sort of) aside, tonight is the vichyssoise that we didn't end up having last night, and salad with something grilled in it - either chicken or shrimp. Last night was leftover M&C with a really good side salad.

raesmom1612 - I am so sorry to hear about your grandma. You are in my thoughts and prayers. Good news about your mom, though. And no, you definitely do not need this stress right now. If I can help, let me know.

twinredheads - congrats on your 20th! Enjoy your wonderful dinner!

Good news mom is on her way home from the hospital after 4 long months YAY, bad news we got a call from my grama in Puerto Rioc's neighbor that she fell and hit her head. She is 83. We had to all put money together to send dad out there to check on her and its not looking good now one of us may have to go out there and is looking like it may be me :/ like I need this extra stress. Please continue to pray :) I guess DH and Rae will be making dinner tonight.

CTONDEE31205 - put it in a pot with salsa, a can of corn and black beans (both drained), serve over rice and top with cheese and you have our version of Santa Fe Chicken. Easy to double or triple. My kids like to have the leftovers for lunch in tortillas. Super easy!
