    Well, I have some leftover potato salad from Sunday. Maybe baked chicken drumsticks? I have some salad that is use it or lose it too, so if I make a Caesar dressing, DW might eat it. Can you tell how inspired I am to cook tonight? Not!!! Truth be told, I'd be happy with a fat slice of cake or a bag of black jelly beans. Only 11 more months till Easter. ;)

    Faye- love that you do enough for 2 days! I'm thinking since it's just the 2 of us, I can cook meats that last 3 days (to use in different styles of recipes) and then just add a fresh veggie and rice or something each night. Yes... you can tell I'm bit over cooking for the moment lol!

    And tonight I'm finally doing that rosemary steak that we didn't do yesterday. I'll use one of the sweet potatoes and I think I'll steam the broccoli that I cut up.

    RFB - How awesome to get ahead on your meals this week! I don't do a lot of pre-meal food prep before the day of the meal but I do make it a point to double batch meals or just ingredients like soup, chicken, casseroles so we have multiple meals and only cook once. For instance, last night I made enough chicken in the slow cooker that we will have it for another meal this week.

    What are you making for dinner tonight?

    Rasemom - yum on the pineapple cakes! Garnertoy's strawberry ice cream would be good with them! lol

    Well, I'm VERY excited as I did some food prep this morning (it only took about 1-1/2 hrs.) and I have a ton of food to quickly put together over the next few days. I've been noticing some of my produce (and even chicken-gasp!) going to waste, so I decided to wash and prep all of it and cook some of it, along with chicken.

    I baked 3 sweet potatoes, poached split chicken breast (BOGO at HT) for sandwiches/salads, washed and cut up kale, broccoli and green beans. I cooked 2 veggie dishes- leeks and fennel, and made a honey mustard chicken for dinner. I also cut a pineapple and washed/cut up strawberries. Still can't believe I got all that done in such a short amount of time with minimal dishes.

    Do any of you do weekly food prep? Would love to hear any of your secrets :-)

    Tonight is bbq ribs with potato salad baked beans and biscuits. Cutting up some cantaloupe for Rae and DH.

    Found a very easy and simple recipe for mini pineapple upside down cakes so Rae and I are going to give it a shot either tonight or tomorrow.

    Turkey sandwiches on bollilo rolls with avocado, tomato and cheese. Tater tots and watermelon/mango fruit salad on the side.

    bbq pork chops, baked potatoes, baked beans, a salad, strawberry ice cream
