Sorry about the bread fail, PCB. It's such a bummer when a new recipe does not work out as planned. Hopefully take 2 will be fabulous.

Your menu tonight sounds like a winner though. :-)

Tonight's menu, provided I have any energy left after taking my Scottie princess to the vet for her annual physical, is going to be spaghetti and meatballs with a side salad. The plan is to make enough meatballs and sauce to have enough left for meatball parmesan subs later in the week.

For the first time in months I finally baked some bread yesterday. Sadly, it was a new recipe, and it was a total bomb, mostly due to user error. :p It was a sourdough bread made with greek yogurt -- I'm still trying to get myself to like yogurt. The little bit of the bread that I tasted was actually really good, just ridiculously underbaked, so I'm going to try it again.

Sounds tasty to me, Melissa. I hope they are a hit!

Faye-they are very similar. The main differences appear to be no enchilada sauce and you brush them with butter to make the tortilla crispy. I won't be using much butter, just enough to make it something different.

Tonight we are having turkey and cheese melts, onion rings, steamed carrots (.69 baby carrots at Aldi through 3/3) and fruit salad with strawberries, blackberry and bananas.

Enjoy the chimichangas, Melissa. I went online to find a recipe and they seem a lot like chicken enchiladas.

Baked chicken chimichangas, green salad and chips and salsa.
