    Violet - thanks for the Bull Dog sauce info and the recipe. I was looking at a recipe on and a number of people made their own katsu sauce with ketchup, soy, etc. I will definitely bake it when I make it based on your recommendation.

    Faye- I dip it in flour, then egg, then panko (free from past sale). I used chicken tenders and it came out amazing! Here's the recipe if you'd like it (and make sure and buy some Bull Dog sauce if you can. They have it at Asian markets or on Amazon... it makes the dish!!!) It was so good, I don't see a reason to fry it in the future.

    Theresa, that was good thinking. Hopefully you did not lose power. Our driveway will be a sheet of ice for says I am afraid.

    Violet - baked Chicken Katsu does sound much healthier. Do you make it with Panko bread crumbs? I just bought some and I think I will make the chicken katsu in the near future. Thanks for the idea. :-)

    Making a chicken quinoa broccoli bake.

    Some may be having problems with the signin and a text box coming up. I was using firefox and was signed in and signed into facebook and clicked the link they said, but a box for text would not come up. I disabled pop up blocker like they said, but nothing. Then I changed to google chrome and went thru same process and they had the text box. So I can now post. So if you are having problems try a different browser. (Kathy S.)

    Last night I baked a chicken thinking if we lost power, we could eat cold chicken! So tonight will be some leftover chicken. Just one other comment. Just went out to get the mail and it was like an ice skating rink! I sure won't be going anywhere for the next few days.

    Tonight I'm trying one of my favorites, Chicken Katsu, baked instead of fried. I actually ran out of oil, plus it will be so much healthier.

    It's leftover chicken taco casserole for us! Tomorrow night maybe meatloaf or chili. Comfort food weather!

    Wow, that sounds good -- especially the pie! If it were not for the ice, you might have had two extra diners at your doorstep! ;)

    The chicken I had planned to use last night had been frozen a bit too long, so I had to toss it. I really hate wasting food, but I don't like taking chances with our health either. We ended up having breakfast for dinner -- fried eggs over easy, breakfast sausage, English muffins -- all things we had on hand and had gotten on sale.

    Tonight looks like pulled pork in homemade BBQ sauce, rice, and maybe broccoli? Not sure I have any broccoli, so it may be grilled asparagus instead.

    I really need to get back to baking. It seems like forever since I've made bread, much less a serious dessert. I have a recipe for a really good low-fat buttermilk cake that DW loves, especially when I do away with the low fat part of the cake by topping it with mocha buttercream frosting.

    Tonight we are having baked chicken, baked onion rings (from deal at HT recently on the Red Robin brand), steamed broccoli and sweet potato pie. Clearly I am all about using the oven tonight!
