    Tonight was cheesy ham and potato casserole with a side of leftover green beans.

    The ham has been cut up and most of it frozen. Some as slices for sandwiches. The bone with extra meat for ham and beans. In total, I think we will get 30+ meals off of it. Now to find some recipes for it.

    jdouglas- I am so sorry to hear of your mums passing. Prayers for you and your family.
    Tonight we had chicken pot pie using up the last of the pie dough I froze a few weeks ago. Spinach, blueberry, strawberry, walnut, and gorgonzola cheese salad drizzled with apple cider and honey mixed with balsamic vinegar for dressing. The last 2 pieces of the pumpkin cheesecake for dessert for Mr. Nichols and the munchkins.

    Salisbury Steak
    1 lb ground beef , 1/4 cup bread crumbs ,1/2 tsp salt ( if using canned beef broth you might skip the added salt ), 1 egg , 1 onion sliced or chopped your preference, 1 can condensed beef broth ( I use Herb Ox packets with no sodium - following package directions to make the equivalent amount ), 1 can mushrooms ( optional - I like fresh ), 1 TBS cold water, 2tsp cornstarch.Mix meat, egg, bread crumbs , seasonings together shape into 4 oval patties cook in skillet over medium heat turning occasionally until brown ( 10 minutes);drain ; add broth, onion & mushrooms to pan - lower heat , cover and cook until done ( 10 minutes ) remove meat and keep warm ;mix cornstarch in cold water add to pan ;stir and cook 1 minute serve over patties. I like add my patties back to the gravy before serving .
    I HOPE this make sense - any questions I will answer when I see them- probably tomorrow - hubby night now lol.
    Sometimes I use more bread crumbs and more broth for more gravy

    I am so SORRY to hear of your loss !!
    I know how difficult this is for you - I hope someday you will see she is always in your heart .
    I will post the recipe after dinner - it is super easy .
    DH and his brother fought over it the last time he ate with us !

    Hey everyone, thanks so much for all the good thoughts and prayers, So very much appreciated. Ascherer, tonight is a perfect M&C night :)

    Although my trip back north originated because my Dad got really sick and ultimately became hospitalized, his ill health was too much for my Mom and she became very sick as well. Although she came home a week ago Sunday from the nursing home/rehab care, her condition deteriorated quickly and she ended up passing peacefully last night just before midnight.

    Sadly I'll miss the cookies swap, but I will be thinking of you all and will pop in here occasionally during the week. Again, thanks everyone! You all are awesome. :)

    LOSLTP - How do you make your Salisbury steak? I love it but have never cooked it.

    jdouglas - my thoughts and prayers are with you and you family. Keep your chin up sweetie. Also, go get some mac & cheese. It will make you feel better.
