    I finally tried the baked ziti that I froze in individual contained. I thawed it in the microwave on the defrost setting (for what seem like forever) until there were no large chunks of frozen. Then I microwaved it on high for about a minute, add some cheese and cooked for another 45 seconds. It is not bad but the noddles lose their firmness. It would probably be better if you set it out to thaw the night before and cook it after thawing. Now I know.

    Thanks so much for everyone's kind words and good thoughts. Tonight ended up being a sandwich, but we made it ourselves at home so it was good. We stopped at the store on the way home and picked up some deli for a few quick meals.

    Dinner :
    Pork cooked in slow cooker a couple days ago - added BBQ sauce today ,serving with sides of slaw , slow cooked baked beans and crusty bread or rolls . last 2 pieces of apple pie that we hid from the human vultures lol

    Raesmom and JDOUGLAS - my thoughts and prayers are with you.

    No clue about dinner tonight. There is a chance I am going to have to drop everything and make an emergency work trip to Maryland tomorrow. Once I get that figured out, I might have time to think of dinner. I may just pick up a pizza or some take out.

    Losltp~What a great idea!! I forget about that Skype thing sometimes lol It was not an accident. Dad has diabetes and over the years it has gotten worse. He didnt take care of himself too well and so now we are all suffering the consequences. But you are right about him.....pretty soon he will be telling everyone in there what to do :)!! (I get my goofyness, sarcasm, and care free attitude from him LOL)

    Tonight will be pork chops in the oven smoothered in country gravy with mashed potatoes, biscuits and veggies on the side.

    Jdouglas~I know the feeling of having to eat hospital food, Rae and my baby nephew (as well as a few of my sisters and I) had to survive on hospital food while we were home too, not fun. Thinking of you and your parents, talk to you soon.

    Sounds like he has a good attitude and will be running the rehab in no time !

    Love your soup ideas ladies !
    My daddy named mine "dump soup " - whatever I can dump in it from the fridge/freezer ( does anyone else save little bits of beef/chicken etc.. knowing full well you will forget it or not want that sandwich you were dreaming of the day you saved it ??).
    I am SO SORRY to hear both your parents are in the hospital !!
    Wish I could ship you a nice meal right now !
    Having you there will encourage them to get better soon

    Tonight we are having shrimp and veggies (zucchini, squash and onions) served on a bed of fettuccini with a light cream sauce and salad on the side.

    jdouglas13 - I am so sorry that both your parents are now in the hospital. It's a good thing you went up when you did. You are all in my thoughts. Good luck finding some real food.
