    I'm with bjmholmes3 in that my husband is also working late so dinner is all about me. No idea what it will be. Sadly I am out of cereal ;) That's actually one of my favorite solo dinners. I think I might make a grilled cheese and heat up some of the leftover butternut squash soup I made this weekend.

    I accidentally made butter once when trying to make whipped cream in a stand mixer. It wasn't hard to do. I seem to remember that some water separated from the butter, so I'm not sure what the final weight was for a price comparison. I'm hoping to get to HT today to get some of the Challenge butter while it's still on sale.

    Dinner is pure comfort food tonight. I don't even need to go any further ;)

    puddle jumping and banana pudding - sounds like a fun day with your children !
    I was going to try making the butter today but storms keeping me form going to storm for the cream .I do have some bananas I need to do something with - pudding ?? bread ?? decisions, decisions

    nakabi - your stew sounds wonderful - so does jumping in the puddles! We have some serious rain going on here in NC right now as well. But no puddle jumping for me today - too many super doubles deals to find!

    Observant-I make homemade butter often and its easy and delicious! Using the mixer is a lot easier.
    Tonight we are havin spicy Moroccan beef and sweet potato stew using ingredients on hand. Will have couscous with it and also cornbread per Davids request. Kids and I made banana pudding this morning after jumping in the puddles so we will have it for dessert.

    Has anyone made homemade butter with a stand mixer ??
    I am trying this very soon !
    I heard about it on a blog ( maybe here ?) and talked with 2 young women from a cooking school who have made it . They both said it was so easy and delicious !
    I am curious about price vs. bought butter and how long it will stay good with proper storage .

    bjmholmes3 - that's too funny! Now don't go all crazy on your solo dinner with a bowl of cereal. lol

    Tonight we are having chicken philly sandwiches on bollilo rolls (on sale at LF through today for $1.99) with leftover chicken breast from the slow cooker last night and sauteed onions, green pepper and mushrooms topped with cheese. Sides of cole slaw and fruit.

    It may be left overs for me, or cereal, or blueberry pancakes!?! Hubby has a board meeting which includes his dinner. So tonight it is all about me! Boo, ha, ha (said with a scary Halloween voice LOL).
