    jdouglas - Happy Birthday to your DW and good luck with the pup. Maybe you can bribe with greens beans first.

    Dinner tonight is Outback. We are celebrating DH's sister Birthday.

    Speaking of veggies, I just prepped a ridiculously huge amount of kale for the freezer to be added into pasta, soup, etc, made a trayful of roasted red peppers from the recent sale at Lowes. I also have some grape tomatoes I am using in salad, roasting for the freezer, and some may be turned into tomato-raisin chutney.

    While I was doing all this kitchen stuff, DW spent her bday at the vet AGAIN with the little guy. My feisty, biting pup is getting a new treat -- eyedrops twice a day. Someone hand me the muzzle please and wish us luck. :p

    I am obsessed with veggies RFB! My mouth is watering over your salad lol The taco packet idea is so simple and adds so much flavor to the meat. I hope you like it :)

    DW's birthday today, so the menu was as her request: surf and turf - steak on the grill and a couple of lobster tails from the freezer (which I am praying are still good), mashed potatoes, mixed green salad with gorgonzola. I'm making a buttermilk cake with mocha whipped frosting and chocolate ganache poured over the top.

    Raesmom- what a great idea! I have some packets, so I think I'll try that tonight for my DH :-) Oh, and the rainbow salad is just a ton of colorful veggies mixed with romaine with an apple cider Dijon vinaigrette.

    RFB~if you season the chicken with a packet (or your own mixture of taco seasoning) and rub the chicken with it, then pour the salsa over and bake.....mmmmmmmmm I serve with sour cream and shredded cheese. Your rainbow salad sounds amazing!!!

    Tonight I'm making salsa chicken... so simple just dump on some salsa and bake! And a big rainbow salad on the side.

    Also, last night with our cod (which was yummy!) I made some potatoes. I realized once I looked at the bag that they were ready to microwave, just add seasonings! I got them from Food Lion in the produce section (there were several types, these were Yukon gold, I think) and I just opened up the bag, drizzled in some olive oil, added some salt, pepper and Greek seasoning. I closed it back up and microwaved for 8 minutes... and they were perfect! Just wanted to pass it on, as they are so delicious, and easy.
