    Tonight we are having Chicken & cheese enchiladas, Spanish rice, steamed broccoli.

    That is a crazy good deal on the chicken, Nakabi!! The sauce mix does sound delicious.

    WFR - that mac & cheese sounds awesome. Let us know what you think.

    Since I just found a recipe for mac n cheese using my rice cooker instead of my crockpot-mac n cheese! Less than 30 min, with a nice crispy crust on the bottom!

    was supposed to be beef stew today, but didnt have the meat on hand, so taco soup today and tomorrow, beef stew thursday and friday :)

    Nakabi- wow, what a great deal! And good tip on the two sauces.

    Jcpmoore- great idea on the chorizo and kale!

    And we're doing leftover pork tenderloin again lol! It's been nice doing some easy meals, and today I bought some tortillas on sale at HT, so we'll do quesadillas with a HUGE salad on the side.

    Chorizo and sauteed kale. Served with a spring mix salad with blueberries and homemade lemon garlic vinaigrette dressing.

    Grilled chicken quarters (Aldi deal for .49/lb, PLUS additional $2 off per package..total for 10 lbs was $3!!! got 3 packs of chicken quarters!!! Will brush the chicken with bbq & lawrys hawaiian sauce mixed together (delicious), 3 bean salad, wild rice, and broccoli.
