Thanks everyone for your help and suggestions! I will run them past her and see what appeals to her. I'm at the point that I will cook whatever she wants.

And speaking of cheesecake, I offered to make one for her and told her she could give me her crust (my fave part anyway), and her eyes lit up. So, cheesecake will be on the menu tomorrow.

Jdouglas - Here are some thoughts:

Sweet potato casserole (with no nuts)

    Crustless quiche

Yogurt and fruit smoothies well blended so no crunchy ice (or omit the ice completely)

Peanut butter (creamy) and banana sandwiches on soft bread

Soup - I had tomato soup for snack today with parmesan sprinkled on top - yum!

I'll try to think of some others.

jdouglas- I found an interesting recipe for a trout frittata with spinach... do either of you like fish? http://www.theguardian.com/lifeandstyle/2009/apr/08/trout-spinach-recipe

And we're doing... you guessed it- chicken! But, I'm going to add in some artichoke hearts and tomatoes, plus some Greek seasoning for one of my favorite simple dishes.

jdouglas - How about Mac & Cheese for you both?

And we're back to soft foods again for at least several days. I've run out of ideas. Any suggestions? All I can think of is mashed potatoes, and my poor DW is starving. :(

    TJ84 - I love zucchini sliced up in a salad. Delicious! :-)

  • TJ84 May 27, 12:58 p.m.

Today must be the day for chef salad, cause that's what I was thinking of having before I looked at the blog! I have a Smithfield ham steak from SD that I want to use. Faye I never thought to put zucchini on the salad, may just have to try that.
