    For those who would like to use ground chicken, you can always ask the butcher at the grocery store to grind your boneless skinless chicken when you buy it :) They gladly do that free! Then you know exactly what you have bought.

    Tonight we're having a hamburger Mac and cheese casserole with onion, red and yellow peppers, and maybe some frozen peas thrown in, too. I haven't decided on the side yet but it might be sautéed spinach. And maybe a green salad with some fresh veggies.

    I hear you, Faye. I think the only way I could do ground chicken if it was more like boneless skinless chicken breasts that I chopped myself in the food processor. Shredded sounds much better. RFB's recipe does sound good!

    Not a clue for dinner tonight. I have to go to the dentist tomorrow for what I am really hoping won't be two new crowns. I'm in the mood for spaghetti, but am trying to avoid garlic. DW keeps asking if A has garlic, if B has garlic, etc., and I keep telling her I make almost nothing without garlic. Really? After almost 24 years? LOL

    OTOH, I do have tomorrow's dinner in the oven -- HT BOGO London Broil. I got the butcher to cut one for me extra thick. Half is in the freezer for grilling another day after a soy sauce marinade. The other half is being made into pot roast with a red wine gravy with grape tomatoes, mushrooms, and onions in the pot along with. Pot roast always tastes better to me the next day, and this way I don't have to deal with dinner when I get home

    jdouglas - I will be making the stromboli with shredded chicken as RFB suggested since I don't do ground anything. lol

    We've got snow and sleet today (WHAT????) so it's a good day for soup. Friends from MO are making Italian wedding soup and fresh bread. The house smells amazing!

    Leftover chicken, matzoh ball soup, kugel and carrots. So glad I don't have to do anything for dinner but reheat today. :-)

    We're doing my Chicken Lasagna Petals with poached split chicken breasts (HT), spinach, onion, canned tomatoes (HT), white beans, mozzarella cheese, and won ton wrappers. And some frozen broccoli on the side.
