    straitlover1965 - We are on a cole slaw kick right now! I bought some slaw dressing that is not too high in fat and cals and I add very little to my serving of slaw.

    I'm having leftover pork loin that was a little on the blah side, so I am chopping it up and mixing it in some Sweet Baby Rays and throwing it in the toaster oven for 15 minutes or so. Sides will probably be a little Food Lion coleslaw (not too much! watching the calories) and Birdseye Steamfresh brown rice w/ broccoli and carrots.

    RFB, I love the idea of limes on the sweet potatoes. I will definitely have to try that! I always have lemons around, but never thought about lime, even though I love all things citrus. Great idea! The poundcake I made yesterday had the zest of a whole lemon and a whole orange in it which I mushed in (real technical term) with the sugar before I added it. It smelled so good.

    Faye, I hope you like the lemon pepper ! I just read again what you are doing with the zucchini and it sounds delicious. I've had some coffee since I read it the first time and am actually comprehending it now. :p

    I wish Fresh Market and Whole Foods and TJ, for that matter, were closer to take advantage of some of their deals. Maybe, it's a good thing, though, that they're not. I don't know if my grocery budget could handle it. ;)

    jdouglas- wow, that sounds like the perfect way to cook zucchini! I saw today that Fresh Market has zucchini for .98/lb. I wasn't able to get by there today... bummer!!!

    Also, if you have any limes on hand, I'd love to hear what you think of zesting a tiny bit on your roasted sweet potatoes (before you roast them). We love it :-) And I'll have to look for the TJ lemon pepper next time I'm there!

    Jdouglas - I price matched the zucchini .99/lb price from Kroger this week at Walmart. :-)

    I am limiting butter right now so I sautee the sliced zucchini, sliced onions and sliced mushrooms in a skillet sprayed with olive oil spray and then season with garlic powder and pepper just before they are done. So delicious. I will have to try some lemon pepper tonight. I love that idea. Thanks!

    Faye, where did you find the zucchini for $0.99? I know it's early in the season, but I love zucchini, yellow squash, a pinch of thyme, and some green scallions sautéed together in a bit of butter. It takes just a couple of seconds, but so much flavor. Some of TJ's lemon pepper (grinder) is a perfect topper. I use that lemon pepper on everything.

    If I remember to take it out of the freezer, tonight might be a roasted pork tenderloin with a garlic and herb coating, roasted sweet potatoes and roasted brussel sprouts. I plan to put everything on a lined half-sheet pan, so the clean up with be super easy. Plan B is leftover stew over noodles.

    Tonight we are having sesame teriyaki tofu with sauteed zucchini, mushrooms and onions service on rice, cantaloupe

    The tofu and Mahatma rice were free last week at HT, zucchini was .99/lb and mushrooms are $2.47 for 16 oz container at HT every day of the week.
