    Dinner is finally mostly in the oven. Chicken #2 with an under-the-skin rub of butter, mustard, shallots, rosemary, garlic, Italian parsley. Red potatoes (roasted with the chicken or smashed - TBD) and roasted asparagus.

    I really need to get myself back into the cooking groove that I just haven't been in all winter. We never had dinner until 10 pm last night, and DW was thrilled (not) that it was M&C and broccoli. Hey, I haven't made it since I got home! LOL ;)

    RFB, glad to see you and your DH are starting to feel a little better! Your menu sounds delicious!

    Leftovers - spaghetti for some, parmesan chicken for others - asparagus from HT today and potatoes.

    Both of those sound good!!! Still on bedrest and friends are bringing meals. Tonight its pot roast with carrots and potatoes (I cant eat the veggies though) so DH will make me some baked asparagus and roasted cauliflower.

    RaleighFoodBlogger - I bought one of the black bean salsas yesterday because they were out of the avocado verde. We will probably try that tongiht as well. Sounds like you are feeling better! Yay! And your dinner sounds awesome. :-)

    LOL! Just realized I posted this on the Monday thread :-) So here it is for today... Tonight I think we'll do Cilantro Shrimp Quesadillas with Mango Avocado Salsa using some BOGO shrimp I got at FL, and a mango for $1 at HT. I have most of the rest on hand. It's really yummy- here's the recipe if anyone wants to try it. (You could use the Wholly Salsa on top as well :-)

    And Faye- that sounds delicious! I found the kind with the avocado, roasted corn and black beans (at the Durant/Falls HT). It's pretty good, too :-)
