    Jdouglas- Southern Season is so great, I've only been once, but was in awe the whole time. And thanks so much for the potato pancake recipe. That sounds delicious!! And on the freezing... since they are cooked, I'd think it would be OK. But, would have to do some research since they were cooked twice in different ways and brought to room temperature in between.

    Ran out of space. Make sure your potatoes are cold, and add enough flour/cheese so that they hold together. I even thought about an extra egg yolk, but didn't need it. I used dried onion flakes, onion powder, and some dried parsley. As soon as you take them out of the pan, sprinkle lightly with salt, although I thought they were salty enough from the parm. Sooooooo delish!

    RFB, I would love to go shopping with you one of these days. Maybe we should even meet up at Sur La Table in Southpoint or Southern Season in Chapel Hill.

    And I realized after I posted that today is in fact Tuesday, not Monday, so no pizza on sale today.

    The mashed potato pancakes: ~3 cups cold mashed potatoes, ~1/2 - 3/4 cup parm, 3 heaping T flour plus more for dredging, 1 egg, a few minced scallions or dry onion flakes and onion powder, black pepper, NO salt . Mix all together. I tasted at this point for seasoning and it needed more onion. Form into balls the size of a heaping small cookie dough scoop, flatten to 1/2 inch (they should be about 2 1/2" diameter), dredge gently in flour. Fry in a mixture of vegetable oil and butter until deep golden brown, turn and cook other side. Sprinkle with salt, drain on paper towels. Do you think I could freeze them?

    jdouglas- I would love the recipe! And I say take a break from cooking and grab a pizza. You'll need your strength for tomorrow morning's super doubles! Have fun... and wish you all were closer, it would be so fun to shop together!

    Careless, I made some mashed potato pancakes the other night with the leftover mashed potatoes. Sooooo good! If anyone wants the recipe, let me know. I had just typed it, but hit the 1000 character limit and it went away.

    No clue what I'm making tonight. I've been sitting here for the last half hour trying to decide if I want to go back to HT and get two more boxes of BOGO Kelloggs raisin bran with the coupons I ordered from KFR. If I do, today is $7.99 Pizza Monday at HT, and I may pick one up.

    Country Style Pork Ribs in the Crock Pot on sale at Kroger, with Sweet Baby Ray's BBQ Sauce (from HT last week). And I think I'll do some mashed potatoes too... thanks Carelesswhisper and Nakabi for the idea!

    Did whole chicken with wedged potatoes last night via crock pot (best flavoring for that is the McCormick Rotisserie Chicken seasonings applied liberally, even inside the chicken). With salad side and fresh baked bread.
