    Lesson learned tonight. Don't use extra lean hamburger in meatloaf. When I tried to cut it, it just crumbled.

    Had a change of plans. I was in the mood for tofu (true story) so we had the teriyaki sesame tofu stir fry for dinner. I could honestly eat that every single day. :-)

    And I think I am adding homemade veggie soup tom the menu tomorrow because it is definitely soup weather!

    jdouglas - how was the chicken?

    Meatloaf (using Angus ground beef bought on Manager's Special mark down and frozen), with mashed potatoes, butter beans (on sale), and broccoli for DH.

    Nakabi, the gnocchi with your chicken will be delicious! I love using gnocchi in place of dumplings for stew, soup, etc. I usually cook them separately, then combine when serving.

    jdouglas-that's a great idea about the gnocchi! May do that instead of dumplings for our chickn and dumplings for our meal on the menu for tomorrow. Thanks for the suggestions!

    Nakabi, if you still have those leftover baked potatoes, you could make gnocchi. If you don't bother with doing the lines, they go pretty fast and, to me, taste just as good.

    Well, this is only frugal because we used some of our pharmacy $$ at HT, so basically it was free. Otherwise, I don't think we would have splurged.

    We are having a roasted "Smart Chicken", which I'm hoping tastes like a Bell & Evans. Mashed potatoes, gravy, and green beans. I plan to get every bit out of that chicken by making stock with the carcass/leftovers.

    Has anyone had one of those chickens?

    These dishes are all making me hungry!

    Faye- I also hit FL today and got some nice produce, plus some markdown steaks. So... tonight is rosemary pan fried strip steaks and grilled Caesar salad (have 2 packages of romaine I need to use up from HT!) Will use leftover steak for lunch pita pockets the next few days for DH, so I will be able to stretch the cost even more :-)

    And snow? Wow, it's pretty sunny/nice in N. Raleigh... but YAY for snow!!!

    Ham Casserole with the $3 off ham from Aldi. Adding mushrooms, bell peppers, onions, tomatoes and spinach with shredded hash browns. Topped with shredded cheese HT B2G3.
