    Nakabi, I haven't made kale chips. I usually just add it to soup, pasta, etc., or even cook it like you would spinach or chard. It cooks down quite a bit, but doesn't get as mushy as spinach. Well, didn't get the brownies made, but I did make some chocolate chip cookies, so come on over anytime! :)

    And I have actually had dinner in the oven for 45 minutes! That's a huge accomplishment in this house. Good Housekeeping had a one-pan roasted chicken and veg dish on the cover, and I made a rift on that with potatoes, carrots, red onion, a turnip, a few green beans, EVOO, garlic, and a couple of sprigs of rosemary from what's left of my pitiful frostbitten garden. Nakabi, I thought of you when I was picking the rosemary.

    Dinner tomorrow will be lasagna. I have sauce going in the slow cooker. Has anyone made sauce in the slow cooker? I'm still waiting for signs of a simmer, and it's been in there for 2 hours on high already.

    RFB-I'm definitely going to try them! I've got some Jennie-O (I think) turkey burgers that you definitely have to dress up so that's a great way to do it! Thanks for the idea!
    JDouglas-I've only cooked kale a couple times. What are some different ways you prepare it? I wantd to try to make kale chips, but have yet to do it. Any tips on doing it? and brownies for supper???? Don't tell my DH or else he will beg me to make some too :) What time is dessert?

    Trying a new recipe tonight - Slow Cooker Bacon Wrapped Apple BBQ Chicken found on yummly.com. It smells delicious! Making mashed potatoes with it.

    Nakabi- thanks! I made them- so simple! Just add 1 lb. ground turkey, juice from 1/2 lemon, 1/2 red onion, minced, 1/4 c. cilantro, chopped, and salt and pepper. You could really add any flavors you like! Hope you give them a try :-)

    RFB, I'm tickled that you tried kale and loved it! It's one of my fave veggies. DW sort of tolerates it if well disguised. Cooked kale is yummy and I add it to soup, pasta concoctions, etc. Your salad and dressing sound so good. Your shrimp fried rice sounds awesome and make me a little sorry I used the last of my shrimp stash last night in scampi. The scampi was a concoction of shrimp, pasta and kale.

    Nakabi your stirfry sounds yummy. Great job your your free/cheap veggies!

    WFR, if you are really in a pinch, try adding just a drop of milk or half & half to stretch your dressing. The vinegar from the mayo will sour it enough so it doesn't taste weird.

    It seems I always post last night's dinner instead of tonight's, mostly because I don't have a clue until I actual get in the kitchen and start cooking. Tonight may be chicken or lasagna or brownies! ;)

    Tonight we're having Shrimp Fried Rice with Shrimp from past BOGO from FL, and rest of the ingredients were on hand.

    And... couldn't resist adding in my lunch today, as it was so healthy and delicious! Lemony Cilantro Turkey Burger (bunless) with a kale salad with blueberries, red onions, and a dressing of apple cider vinegar, olive oil, minced red onions, honey and Dijon, salt and pepper. Turkey & blueberries BOGO from HT today, red onions on sale. Kale from Earth Fare on sale, the rest on hand!

    Jdouglas- if you see this... I was inspired and tried kale and love it! I found the secret was to let the tossed kale salad sit and "marinate" in the dressing for an hour or so before eating to soften it up :-) Thanks for helping me get healthier!
